Living in Europe, we do not have so many Keto or Low-Carb Pasta Alternatives to buy. Apart from Shirataki and Palmini Noodles, all you are left with is to make your own.

The best part, it is super quick and easy to whip up a big bowl of Noodles or Spaghetti you have been craving for such a long time.

All you need is a few ingredients, only 3 in this case, and your Low-Carb Pasta is ready in no time.

How do you make Low-Carb Pasta from Scratch?

Having already experienced with various Homemade Keto and Low-Carb Pasta Recipes, I can confidently say that making your own, Homemade Low-Carb Pasta or Noodles, is much easier than going to the shop and buying one of the substitutes.

Most of my recipes involve a few seconds of blending and a few minutes of baking, and your Keto Pasta Variation is born. 

All you have to do is decide on a sauce and shape. That’s all it takes.

Literally few Ingredients and few minutes of your time.

The first time I have used Fiber as an ingredient to make Keto Pasta was with our Keto Fiber Noodles

They were so versatile, that I had to make some more, and that was the start of my adventure with Fibers.

For our 3 Ingredient Low-Carb Pasta Recipe, I have decided to go ahead and experience with Oat Fiber, which I purchased a while ago and loved the texture and look.

Compare to the Bamboo Fiber or Potato Fiber, I have already used in our Keto Farmers Bread, Fiber Bread Rolls, or Fiber Tortillas, Oat Fiber is extra light in texture.

But what got me the most was the color of Oat Fiber.

Oat Fiber is fully white. White like snow. And light like snow as well. When you take it into your hands and sprinkle it, you will for sure think it is snowing. That’s how beautiful this type of Fiber is. 

Additionally, because of its versatility, our Low-Carb Pasta Dough Recipe is for sure going to be used by me, to experiment with other Keto Dishes in the future.

Ribbon Shaped Pasta

After making our Homemade Keto Spaghetti, where I have used a Pasta Machine to get that perfect thin Spaghetti shape, I have found in the box another gadget, I have never realized was inside.

There were pieces of round-shaped wheels, which I have thought is a part of the whole machine. But as there were quite a few of them, I have finally for the first time opened a manual and found out it is a handheld noodle shaper for Pantacce Pasta or long Mafaldine Noodles.

You can call it Pancatte, Bow Tie (if you squeeze the middle), Ribbon, or a Butterfly. Whatever name you choose, the shape is so beautiful that leaving it inside would be out of the question.

And that is how our Ribbon-Shaped Keto-Friendly Pasta Recipe was born.

Is Oat Fiber safe to eat?

Oat Fiber together with Potato Fiber is a big part of the Keto Diet and Low-Carb Cooking throughout the whole of Europe. 

Oat Fiber is an insoluble fiber, which is subtracted from the hull and contains almost no carbohydrates. 
It contains almost no Calories and Fat, giving us a full blast of Fiber. 

As long as you are not going to try and make your own fiber from fresh Oats, which I would not suggest, buying and using Bamboo Fiber in Keto Diet is perfectly ok.

How do you make a Quick and Easy 3 Ingredient Low-Carb Pasta Recipe from Scratch?

STEP-BY-STEP INSTRUCTIONS ON 3 INGREDIENT ONLY KETO PASTA RECIPE

First Step: Ingredients for Ribbon Shaped Low-Carb Pasta

It is super easy to prepare your ingredients for this Pasta making.

Have your Oat Fiber, Eggs, and Cream Cheese ready. 

Just in case you do not have Oat Fiber in the Kitchen, you can try using Bamboo Fiber or Potato Fiber.

Second Step: Place all ingredients into the Magic Bullet Jar

Place first eggs and then Cream Cheese and Fiber into the Magic Bullet Jar or any Jar you have with your blender.

Salt is optional, as cream cheese is already salty, and therefore I feel you might not need it at all.

Third Step: Blend, Pour, Bake, and Cut

Blend all the ingredients into a smooth consistency.

Once blended, pour either on the Silicone sheet with edges or an ordinary parchment paper-lined baking sheet.

Using a spatula, try to spread the mixture as thin as possible to cover the whole surface of the sheet.

Gently move into the oven and bake at 150C or 300F for approximately 8-10 minutes.

Once baked, take it out of the oven and start preparing for shaping.

Fourth Step: Shape 3 Ingredient Low Carb Pasta

Here comes the fun part.

As you see, I have used a Pasta Bike Cutter, which was a part of my Pasta machine. 

I have cut the sheet into a bit thicker slices and, using the bike cutter, prepared the Ribbon shapes.

You can use this pasta immediately with one of your Keto Sauce, or store it in the refrigerator for up to 3-4 days.

Tips and Tricks

  • Fiber – just in case you do not have Oat Fiber in the Kitchen, you can try using Bamboo Fiber or Potato Fiber. 
  • Shape – For Ribbon Shape, you can use either a Pasta Bike Cutter or Wheel Roller. You can also use an ordinary Pizza Cutter or pastry roller with wavy edges. 
  • Baking Sheet – could be used instead of a silicone sheet with edges. If you are going to use an ordinary baking sheet, I would suggest using parchment paper underneath the mixture. 
  • Thickness – try to pour only enough of the mixture to cover the sheet you are baking it into. The dough will thicken slightly, so it is best to have it as thin as possible.

What do I Serve Low Carb Pasta With?

Any type of sauces you have been used to during regular days will go perfectly with our pasta. Some suggestions are marinara, bolognese, alfredo or cottage cheese pasta sauce.

How do you store Homemade Keto Pasta?

Once you make the Low-Carb pasta, it is perfect to store in the glass container in your fridge for 3-4 days. 

Anything longer, I would suggest freezing.

Can you freeze Low Carb Pasta made at home?

You can certainly freeze this Homemade Keto Pasta in your freezer, either in a ziplock bag or a glass container.

Our Low-Carb Pasta does not need to be boiled at all.

All you have to do is let it thaw naturally and either warm it up in the microwave or mix it directly with your hot keto sauce.

      • Dear Chris, Vous ne savez pas où vous habitez, mais le fromage à la crème Philadelphia devrait être disponible partout et constitue un excellent remplacement.
