Is Cauliflower Rice Keto-Friendly?

Cauliflower rice, that actually looks like rice is a keto-friendly alternative to traditional rice because it is low in carbs and high in fiber.

Compared to the regular white rice dish, you get the same satisfaction, but in a low-carb version without all the heavy carbs white rice contains.

A cup of cauli rice made alone only contains three net carbs. 

One portion of our recipe contains only 4 grams of carbs, compared to the bowl of regular rice with 52 grams of carbs, which is fantastic. 

Creamy Coconut Cauliflower Rice

This creamy coconut riced cauliflower is a delicious and healthy alternative to traditional rice. It is made with coconut milk, coconut oil, and shredded coconut, which gives it a rich and creamy coconut texture, and is flavored with crushed garlic for added flavor.

How to Make Coconut Cauliflower Rice with Creamy Coconut Milk

Let us dive into the recipe with steps in images and video for those who prefer visual instructions. 

I will not add steps to making rice from cauliflower florets, as I have made an entire post for you to look at. You can make cauliflower rice in seconds, or you can also use frozen cauliflower rice.

STEP-BY-STEP INSTRUCTIONS FOR MAKING KETO COCONUT CAULIFLOWER RICE RECIPE

First Step: Ingredients needed

Prepare all ingredients together.

Raw cauliflower rice can be made in a food processor from a large head of cauliflower in seconds using our steps. Coconut milk and shreds can be made at home from scratch using a regular whole coconut. But you can also use canned coconut milk and shreds from the supermarket.

Cauliflower Lime Rice

Second Step: Garlic and Rice

Heat your pan fully and add two tablespoons of coconut oil. Into it, add crushed garlic and let the garlic brown slightly. 

Lower to medium heat and add the cauliflower. Using a spatula, gently mix the oil and garlic into the rice.

Third Step: Spices

Season with salt and pepper, in our case. You can add more seasonings like lime zest or fresh lime juice at this stage.

Fourth Step: Coconut Milk

Add the coconut milk and cook until the cauliflower rice is tender.

Fifth Step: Shredded Coconut

Once everything is ready, turn off the heat and stir in coconut shreds for an additional crunch. Serve hot with freshly chopped cilantro.

TIPS AND TRICKS:

  • Coconut – for a great creamy texture, use full-fat coconut milk, or you can also use coconut cream. Make sure you shake the can before opening it. 
  • Leftover coconut – if you have extra coconut cream or leftover coconut milk, make a quick keto diet coconut ice cream for your family.
