Since we liked it and tried it with various hard cheeses, one of them was Cheddar Cheese. And at that moment, the whole story of this new recipe has begun.
Although they did not pop up like the one from Gouda cheese, the taste was different. It reminded us so much of the original goldfish crackers we used to buy in our old lives of high carbohydrates.
All I needed was imagination, brainstorming, a piece of cheese, and here we are.
I have just invented the easiest Low Carb Keto Goldfish Crackers anyone can make.

Goldfish Crackers Shape
Using a store-bought fish cookie cutter or making your own from a round-shaped cutter is the best and easiest way to make your fish the same size.
As I did not have a fish cutter in my thousands of cookie cutters, I had to use a bit of invention and DIY my round shape cutter into a fish shape. The third attempt worked, and now I can call myself a proud owner of a fish-shaped cookie cutter I have made myself.
Cheese for Keto Goldfish Crackers
The main Cheese for making keto goldfish crackers is Cheddar Cheese. If you pick the orange color, it will give you the resembled color and taste of the original goldfish crackers.
As it tasted like goldfish crackers, all I needed was the look. It needed to look as well like cheese crackers. So my journey in making the recipe has begun.
I have tried different cheddar cheese variations, and as this recipe calls for only a cheese, the easiest to cut out the shapes was from a cheddar cheese slice.
Because the shape of the fish has got those little tail corners, I could not work it out with a whole block of cheddar cheese. It kept breaking all the time.
If you do not want to have the fish shape, then, by all means, use it. I was able to cut it into squares, but once I started the fish shape, all of the tails were breaking.
Luckily I also had in the fridge pre-cut slices of cheddar cheese and that worked perfectly.
Keto Cheese Crackers
Same steps as I have used in our Keto Popcorn recipe: I have cut all of the slices into fish shapes, covered them with tissue paper so they don’t get dusty, and left them on our kitchen top for 4 days.
As I have realized, there are so many different types of cheddar cheese, the length of drying depends on how hard the cheese is. It needs to be almost rock hard. For some, 3 days is more than enough. But for some even 5 days might be needed.
Then came the day for baking. We were all excited and were sitting in front of the oven to see the magic happen.
Watching how those Low Carb Keto Goldfish Crackers started jumping once the heat got into them was fascinating.
I am sure you and your kids will enjoy the process.
In case you do not have a cookie-cutter in the shape of a fish, as I did not have, you can simply make your own.
One suggestion is to cut out a shape from a can bottle.
The second option, which I chose, is to take your round shape cutter and use a bit of pressure to shape it into the fish look, which is pretty easy to make.
Cheddar cheese slices are the easiest to cut out the shapes. Also, ensure your slices are made from hard cheddar cheese and not the soft mixed cheap American cheese slices.
Our recipe for making keto goldfish crackers from cheddar cheese is not only entirely gluten-free but also grain-free, low carb, and perfect for people with diabetes.
I would not suggest using a dehydrator to dry your cheese as the temperature will melt the cheese, and it will not pop and crisp as much as the air-dry cheese crackers.

STEP BY STEP INSTRUCTIONS FOR MAKING THE EASIEST KETO GOLDFISH CRACKERS
First Step: Prepare your cheese
Prepare your only one ingredient, and that is cheddar cheese. If you pick slices, which are the easiest to cut out, you have no worries.
If you want to use a block of cheese, try to slice it with your bread slicer or a meat slicer.
Second Step: Cut out shapes
Using a fish-shaped cookie cutter, start gently cutting fish shapes out of your cheese. As cheddar crumbles easily, you might have to be gentle, especially pushing out the tail parts as those might break easily.
One by one, place the fish-shaped cheese onto a baking sheet covered with parchment paper.
Pick the baking sheet you will not need for the next few days.
Third Step: Let Dry
Once all of your cheese is placed onto a baking sheet, cover it with a kitchen paper towel and put it into your kitchen pantry for 3-4 days until your cheese fully dries.
The drying time might vary depending on the type of cheddar cheese you have used, the thickness, and the size of your crackers.
Make sure the baking sheet is out of reach from your family as they might be eaten before the cheese had a chance to dry.
Fourth Step: Bake
Once your goldfish cheese pieces are fully dry, heat your oven to 200 Celsius or 390 Fahrenheit.
Place in the oven for 3-4 minutes and enjoy.

Can you use a dehydrator to save time?

I have personally not tried it, but I have heard a few people that have used a dehydrator and it worked. Just make sure it is on the lowest temperature and place a parchment paper under it, since one lady mentioned it melted and fell down. But that would have been probably also with higher temperature. How do you store them after baking? How long are the ‘good’ for? These taste amazing and are so fun to watch, but am I the only one a little freaked out by leaving cheese out to dry for days?? Normally it is refrigerated???

If it helps, Italian families keep their cheese always out in the kitchen and not in the fridge. Mind it, it has to be a hard cheese. Nothing will happen. I had it out even for 2 weeks and all was ok. And once you make those beauties, store them in an airtight container. They should stay crunchy there for a very long time. I have it sometimes even month or longer. No worries there as well.

My oven goes from 300 to 325 – what is suggested temp for oven not at 302?

We have everything in Celsius and therefore I calculate the Fahrenheit to the exact point. Here just do 300F.
I had so much fun making these with my kids! They love cutting out the little fish, and I loved that there were no unpronounceable ingredients in their snack.
