Surprise, Surprise. We have just invented Low Carb Keto Goldfish Crackers. How easy this could be. All we need is some imagination, a bit of brainstorming, a piece of cheese and here we are.

Low Carb Keto Goldfish Crackers are born.
I am sure you have seen our most popular recipe Cheese Pops – Low Carb Popcorns.
Since we really liked it and tried it with a variety of hard cheeses, one of them was Cheddar Cheese. And at that moment the whole story of this new recipe has begun.
Although they did not pop up as the one from Gouda cheese, the taste was different. It so much reminded us of Fish crackers, we used to buy in our old lives of high carb lifestyle.
And since not only kids but also us adults are always looking for some alternatives, to what we used to eat, this was just a MUST recipe for all of you.
And of course, since it did taste like fish crackers, it needed to look as well like cheese crackers. So my journey on making the recipe has begun.
Went to the shop, bought few different Cheddar kinds of cheese, just to see which would work the best.
And Sunday was the day when I have planned to try it all. But of course, it never works how it is planned.
We all know this.
This time my problem was the fish cutter. I was sure that I will find at home a fish cookie cutter since I do have a huge bag full of different cutters. I also remembered, that a few years ago, I bought tiny cookie cutters for kids with different animals shapes. So a fish needed to be there. But…. to my surprise, I had everything you. can imagine.. except fish.
And as I am the way I am ( not one of the patient ones), if I want something, then I want it like yesterday. I was not willing to wait until I order a cutout cookie form. It would take at least a week, if not longer for it to come in the mail. And since I already had all the cheese, I had to do something more adventurous. I was also thinking about using a different shape, but then they would not be the real Low Carb Keto Goldfish Crackers.
So, went onto uncle Google and started to research how to make a homemade fish cookie cutter. First I found a cutout from a Pepsi can. Of course, we do not have cans at home. So that idea went down the hill. Then few more, until I found the way how to do it from a round shape cutter on a YouTube.
And as I mentioned, I have a full bag of different cutters, I found 6 different sizes round cutters. That was just a perfect amount to start my DIY. I had lots of options to even destroy some.
And it did work. 4 hours later and after 3 failed attempts.
The 4th one was a winner. 🙂

Now come back to the cheese. Because the shape of the fish has got those little tail corners, I could not work it out with a whole block of Cheddar cheese. It kept breaking all the time. If you do not want to have the fish shape, then by all means, use it. I was able to cut it into squares, but once I started the fish shape, all of the tails were breaking.
Luckily I also had in the fridge precut slices of cheddar cheese, and
So as the Popcorn recipe, I have cut all of the slices into fish shapes, covered it with tissue paper, so it does not get dusty and left it on our kitchen top for 4 days.
As I have realized, there are really so many different types of cheddar cheese, the length of drying depends on how hard the cheese is. It needs to be really almost rock hard. For some, 3 days is more than enough. But for some 5 days is just perfect.
Then came the day for baking. We were all excited and were sitting in front of the oven to see the magic happen.
It was really exciting to watch, how those Low Carb Keto Goldfish Crackers started jumping once the heat got into them.
And our easy to make Oven Baked Keto Cheese Chips are perfect as well.

- 100g (1 Cup) Cheddar Cheese
- Cut the Cheddar cheese into shapes you desire
- Place it on a baking sheet and cover with a tissue so it does not catches the dust
- Keep it on the kitchen top for 4 days to let the cheese dry
- The cheese needs to be hard before going into the oven
- Heat up the oven to 200C (392F)
- Place it in the oven for 3-4 minutes and wait for the magic to appear.
