Easy Mini Cheesecake Recipe

Today, we are venturing into something new and exciting.

These mini cheesecake bites combine the lusciousness of cheesecake with the irresistible crunch of frying, all while keeping the carb count low. It is a delightful way to enjoy your favorite dessert in bite-sized portions, perfect for sharing or savoring.

Added to this, you make them in less than 20 minutes. You are going to love these mini bites for sure.

I had this recipe in a file from a long time ago, when I started blogging, but I did not write it for you because I was not too fond of the pictures I made at that time. Yesterday, I decided to make them again, and in 15 minutes, I prepared and fried them all in one go.

Carbs in Easy Mini Cheesecake Bites

Carb and calories in this recipe are awesome. This cheesecake recipe makes 16 balls, and I have split it into eight servings, each having two balls. 

That is just a perfect amount for a lunch box or a bite of something delicious when craving sweets.

You get 1 gram of carbohydrates and only 30 calories for two balls. Just for this, I am sure you will love cheesecake bites I will introduce you to.

Cheesecake Filling

I have used blueberries and cut strawberries as a filling. But use your imagination and pick from one of the low-carb fruits and pieces of chocolate for making chocolate mini cheesecake bites. You can also fill it up with white chocolate chips if you wish. 

Toppings To Use For Keto Cheesecake Bites

As you see in the photos, I have only sprinkled a bit of sweetener on top. But you can also top them up with coconut shreds or sprinkles for kids. 

Pour one of our homemade sweeteners, such as simple syrup or low-carb maple syrup

If you are craving more chocolate, our chocolate sauce recipe will do the job, and for fruity extras, strawberry jam will add just that. Additionally, dipping them into lemon curd will give you that zesty feeling. 

For triple sweetness, I can not forget our condensed milk you will enjoy. 

If you are following keto and need extra fat, sprinkling them with melted butter will add that to your calculation.

Recipe To Make Mini Cheesecake Bites 

Let us dive into this super easy to make great recipe. These cheesecake bites are made using simple ingredients you certainly have at home. 

I have also prepared a video with complete instructions for those who prefer more visual steps to follow. 

Kitchen Gadgets Needed:

  • Bowl
  • Frying pot
  • Hand Mixer

Ingredients Needed:

  • Egg
  • Sweetener
  • Baking Powder
  • Curd Cheese
  • Protein Powder
  • Coconut Flour
  • Berries

STEP-BY-STEP INSTRUCTIONS TO MAKE CHEESECAKE BITES

First Step: Prepare Ingredients

Prepare all ingredients in advance to save you time making this recipe.

The egg can be middle-sized size, or even small. Regarding protein powder, if you use vanilla that already has sweetness, you can skip additional sweeteners altogether. 

You can make curd or farmers’ cheese at home. If not, try to get the driest version possible. If not, add a tablespoon of protein or coconut flour to the batter to get a similar consistency you see in the video.

Second Step: Mix Eggs Base

Start with mixing an egg and baking powder until smooth. You might see baking powder start working and giving you a foamy consistency. That is OK. Add sweetener and blend it in thoroughly.

Third Step: Add Dry Ingredients

Once all is mixed, we start one by one, adding other dry ingredients and curd cheese. After you add each ingredient, mix it thoroughly. Here, you can use a hand mixer at a low speed if you wish. I could combine the whole cheesecake batter using a whisk and fork.

Fourth Step: Fill

Here comes the fun part. No need to make the cheesecake filling as we are using fresh fruits or chocolate.

If you are making strawberry cheesecake bites, cut them into smaller pieces; for raspberry cheesecake bites, use whole or half, depending on the size of the berries. Prepare a bowl of water because the cheesecake mixture is sticky. 

Wet your hands, take a spoonful of batter and add the filling you choose into the middle. If you use chocolate mini chips, use a maximum of 3 or even one to make small balls. They do expand in the hot oil, and we want to avoid having big doughnut sized cheesecake bites. 

Here, you can start heating oil slowly.

Fifth Step: Roll and Store

Cover the filling with batter and roll into a ball. Place individual cheesecake balls onto a tray ready for frying. 

Remember to scrap all sides of the bowl because this batter is gold. Roll the rest into a tiny ball without filling.

Sixth Step: Fry and Enjoy

Once your oil is hot, set it to medium temperature, or number 6. Six works best for me because the balls also have time to fry from the inside and will not burn quickly on the outside. 

Using a sharp knife, gently lift each ball from the board and place it into the oil. The baking powder still works and might soften the balls while on standby. 

Fry the balls until brown and crispy, turning them regularly, making sure all sites get fried. 

Let them cool to room temperature, and enjoy.

TIPS AND TRICKS:

  • Graham Cracker Crumb – If you wish, you can roll the balls before frying in breadcrumbs or graham cracker crust for extra crunch
  • Cream Cheese – If you swap curd cheese for cream cheese, add more protein powder or coconut flour to thicken the batter. 
  • Frying – gently lift balls from the bard before frying. Baking powder still works and might soften the balls a bit.

What To Serve With Baked Mini Bites?

When serving baked mini cheesecake bites, pair them with a dollop of whipped cream and a sprinkle of fresh berries for a burst of color and flavor that perfectly complements the creamy richness of the bites.

You can also enjoy them with chocolate treats like sugar-free almond bark on the side.

Cream Cheese as a Substitute For Curd Cheese

You can swap curd cheese for cream cheese or even sour cream, as cream cheese offers a similar texture and tangy taste that works well as a substitute.

Because both are much more liquid than curd cheese, I suggest adding one extra tablespoon of protein or coconut flour or combining graham cracker crumbs to get the consistency you saw in the video. The most important is to be able to make balls from the mixture. 

Can I Bake Cheesecake Bites in Advance?

Yes, you can undoubtedly bake cheesecake bites in advance. Prepare and bake them as directed in the recipe, then store them in an airtight container in the refrigerator. This makes for a convenient dessert option when planning gatherings or busy days.

Can I Bake These In The Oven?

You sure can make the cheesecake bites in the oven, and I have tried this for you already. They will not get as crispy as fried, but they are still very delicious and easy to make. 

Follow the steps of making the balls and place each into the mini muffin tin with liners. Bake in the preheated oven for 15 minutes at 175 degrees Celsius or 350 degrees Fahrenheit. 

How Do I Store Crusty Cheesecake Bites?

To keep your crusty cheesecake bites at their best, place them in a single layer in an airtight container. Store cooled cheesecake bites in the refrigerator to maintain their cheesecake crust exterior.

If you know you will enjoy them on the day, keeping them on a plate in your kitchen at room temperature will work well. 

Can I Freeze Fried Cheesecake Balls?

Yes, freezing fried cheesecake balls is possible. After frying, allow them to cool completely, then place them on a baking sheet in a single layer and freeze until firm. When ready to enjoy, you can reheat them in the oven for a few minutes until heated.
