The whole family loved it and for me after that first bite, I was suddenly in my Childhood Croquettes heaven. When I closed my eyes, I remembered all the Croquettes as we call them in Europe, we used to eat during our school lunches.
Keto Croquettes or Keto Tater Tots?
After I have started searching for the best name for this recipe, I decided to add a bit of the info for real Tater Tots.
Just in case you are one of those, who does not know what the name Tater Tots is, here is a brief explanation.
Living in Europe, we used to call them always simply Croquettes.
But as I started researching, I have realized the actual Croquettes in the US are little nuggets always filled with additional cheese, ham, or something else.
Tater Tots are small tiny tube-shaped nuggets made out of potatoes, some flour, and seasoning.
They are fried and served as a side dish or simply dipped into one of the spreads as a snack.
The name Tater Tots was invented by a Frozen Food Company called Ore-Ida.
This ever so popular dish is known to be served especially in schools or cafeterias for lunches.
Various names have been used around the continents, such as Tasti Taters, Tater Treats, Spud Puppies, Mexi Fries, Mexi Nuggets, Potato Loco, Potato Gems, Potato Royals.
Tell me, which name do you use for them?
Our Crunchy Keto Tater Tots or Croquettes are made from the mixture of Nut Keto Flours used most of the time in Keto Cooking and baking.
Adding a bit of Xanthan gum with hot water to the mixture gives them a super smooth consistency, which at the end of frying, chips into a perfectly Golden Brown Keto Snack you all have been missing.
Even though this recipe is super simple and mixed in less than 5 minutes, you do not need to prepare them ahead of time.
Keto Party
But just in case you have a big family or are planning a Keto Party, you can prepare those Keto Tots ahead of time.
Simply roll them into the shapes you like, being cylinder or balls, place them on a board, and store in the refrigerator. Once ready to fry, just add them one by one into the preheated oil and enjoy it.
Instead of frying those Keto Tots, you can without the problem roast them in the oven or an Air Fryer. I have tried it and whatever method you will choose, they are extra delicious.
The most crispiness you can get is by frying them, but if you spray them additionally with a bit of extra oil, they will crisp up in the Air-Fryer and oven as well.
How To make Extra Crispy Keto Tater Tots?

STEP-BY-STEP INSTRUCTION ON HOW TO MAKE EXTRA CRISPY KETO TATER TOTS
First Step: Prepare Ingredients
As a first step, prepare all of your ingredients for easy assembly.
Make sure your water is hot – almost boiling.
Second Step: Add all into a bowl
After you weigh all the dry ingredients, prepare one big bowl where you can mix it all up.
Place all the dry ingredients into the mixing bowl.
Third Step: Mix
Using your spatula, mix all the dry ingredients fully.
Make sure that no visible clumps are left. Also, Xanthan gum should be fully incorporated into the almond and coconut flour.
Fourth Step: Add Water
Once all the dry ingredients are mixed, slowly start adding hot or boiling water into the bowl while mixing it all.
Fifth Step: Mix
When all the hot water is within the dry ingredients’ mixture, using your spatula, make sure it is all fully incorporated together with Keto flours and Xanthan gum.
Keep mixing it until a proper dough has been formed.
Sixth Step: Work out the dough
Once your mixture is smooth, place it all onto the sheet and using your hands, work out the dough making sure it is smooth without any dry lumps from the nut flowers.
As you see in the picture, the dough is pretty sticky and will stay like this for a while.
You can choose to let the mixture sit a little and roll it only later if time allows.
Seventh Step: Roll and cut
You can either split your dough into half or place the part on the side.
Take approximately ¼ of the dough and start rolling.
The easiest for me is to roll it into a log.
Using your spatula or cake scraper, separate the log into smaller pieces all the same sizes.
As you see in the pictures you’re able to make approximately 42 a little Keto Tots.
Eight Step: Shape into cylinders
One by one, take each of the pieces and roll with your hands into smaller log or cylinder shape tots.
One tip in this step is to roll each tot once again after about 5 to 10 minutes. In this time, all the pieces get a little dry, and you can roll them into a much smoother shape.
Ninth Step: Fry
Once all of your Keto Tater Tots are prepared, place them one by one into the preheated frying pan with oil. Have your settings on to six or medium heat.
Slowly fry all the Keto Tots, turning them regularly.
Tenth Step: Paper Towel
When you see that your tots are turning into a beautiful golden color, one by one, place them into the plate covered with a paper towel.
This will make sure all the remaining oil is being soaked into the towel and our Keto Tots become the crispiest ever.
Tips and Tricks:
2x rolling – Roll each Keto Tot once again after about 5 to 10 minutes. In this time, all the pieces get a little dry, and you can roll them into a much smoother shape.
Paper towel – use for draining the extra oil left after frying. This will make our Keto Tots the crispiest ever
Freezing – I would suggest preparing the Keto Tots up to the 9th step and placing them all onto a plate and then the freezer. Once all the tots are frozen, you can take them out and place them all into a Ziploc bag and into the freezer for storing.

How to store Keto Tater Tots?
Even though I would suggest enjoying your Keto Tots as fresh as possible, you can of course store them without the problem.
Once they cool down, place them into an airtight container and store in the refrigerator for up to 2 to 3 days.
If you want to store them longer, I would suggest placing them in the freezer.
Can you freeze Keto Croquettes?
You can certainly freeze our keto croquettes or tots once fried. You might have them not as crispy as fresh ones, but placing them into the oven for a few minutes should retain a little of the crispiness back.
I would suggest freezing the batter before it is fried.
What you can do is follow up all the steps until step number nine.
Have all the tots on one plate and place them into the freezer.
Once they are frozen, you can then place them all into a Ziploc bag and use it as you normally would fry a frozen Tater Tots directly bought from the shop.

You can use any oil you normally fry with. Be it Olive Oil, avocado, Coconut or even rapseed oil

Carlo, theey are not dense at all. I would say more fluffy type of texture.
almond allergy here, substitute for almond flour?
You can use coconut flour only. Just use half in measurements as coconut is pretty dense.
Yikes! That’s a lot of xantham gum. Whenever I’ve used more than 1/2 tsp in sauces, it’s slimy and I don’t care for it at all. In this recipe, does it give a slimy texture at all?
Not slimy at all. You would be surprice, that Xanthan is not felt in here even though it is pretty much of it
How is this a “tater” tot without any potatoes? These are just fried dough
