I know we all crave from time to time dishes, we have been used to eating before our change to Low Carb Lifestyle. And it is pretty normal.
I get stopped sometimes, just by walking around the bakery. That smell of fresh-baked bread gets me every time. But this lasts for about a second. Until I realize, what it is made from and why my family and I have changed.
The health benefits of the ways we eat are not comparable and there is no way I would ever go back to ordinary eating habits. And therefore I always make sure we have a replacement for healthy alternatives in our house. I have so far managed to make a perfect Keto Farmers Bread, which is really unrecognizable from a normal loaf. I have made various Keto Snacks, just in case we do need to nib on something crunchy and special. And also have already a bit collection of Keto
Fathead Dough
Most of all, I have fallen in love with a Fathead Dough. It is so versatile, you can make almost anything you can imagine. After lots of trials and errors, I have made my own variation, which we all love and use it with all of my Fathead Recipes.
I have written quite a bit about what is a Fathead and how to make it in our Keto Bacon Fathead Pizza Recipe, just in case you are interested to read a bit more.
Fathead Dough With Coconut Flour
Even though I have made simple 3 ingredients only Egg-Free Keto Breadsticks already, I have never tried to make a Fathead Dough with a coconut Flour.
Reason? Not so sure. I hardly use coconut flour. My guess is, that because at the beginning of our journey, I have made few recipes with coconut flour, which were not the best. That made me stop using coconut flour almost entirely.
When I started experimenting with a Fathead Dough, I simply turn to using only almond flour.
But you can check the differences of almond flour vs. coconut flour.

And then magic happened. I was lucky enough to see that my dear friend Maya from Wholesomeyum has published her first book. And I tell you. It is filled with so many fabulous recipes, that I will spend the next few months making quite a few of them. Difficult to choose which one is my favorite, since the choices are enormous and the pictures just make you wanna have it all on the table.
Like right now. Not Tomorrow.
The book is filled with 100 simple and easy to make Keto Recipes. The all contain minimal ingredients, so no worry that you would have to go shopping for special this and that every time you want to cook something.
What struck me there, were her lovely looking Italian Bread Sticks made with fathead dough including a coconut flour. So here I want and said to myself: ” one more trial and then decide”.
And I tell you. Those Garlicky Keto Cheese Sticks are so simple to make and extremely fluffy, almost like a real thing.
And I am again convinced, I should use coconut flour much more in our keto cooking and baking.
How to make Keto Italian Breadsticks?
I have made some alternations to the recipe, mostly on the process of making this recipe and the sequence of it. Otherwise, everything else, including all of the ingredients stay the same.
Tools to make Fathead Breadsticks:
- Medium size Non
– Stick Pot - Baking tray
- Parchment paper or Silicone Baking Sheet
Ingredients Needed:
- Mozzarella Cheese
- Cream Cheese
- Coconut Flour
- Eggs
- Garlic Powder
- Butter
- Italian Seasoning
- Sea Salt
STEP BY STEP INSTRUCTIONS ON MAKING THE BEST KETO ITALIAN BREADSTICK S
First Step: Prepare all ingredients
Prepare all of the ingredients needed for making the best Keto Fathead Breadsticks. I like to always segregate all into small glass jars, but you can just combine dry and wet ingredients into 2 separate glass containers as well.
Second Step: Mozzarella
Shred mozzarella and place it into the nonstick pot. Heat it up and while mixing it slowly with a spatula, make sure all of the mozzarella
Be sure to use the prepackaged mozzarella cheese in this recipe. Fresh mozzarella contains too much water and your breadsticks won’t turn out as they should.
Third Step: Cream Cheese and Butter
Once your mozzarella is fully melted, add butter and cream cheese and combine together while still hot.
In this step I switch off the heater and keep mixing it fully until I am satisfied with the dough.
If you still feel, the mozzarella is not fully melted or combined, switch the heat again at a low temperature and keep mixing.
Fourth Step: Other Ingredients
Switch of the heat and slowly one by one add all of the other ingredients. Keep mixing best with a plastic spatula and make sure all of the ingredients are fully combined into one dough.
Fifth Step: Eggs
At this stage, the fathead dough should be a bit cooler and it is the time to add all of the eggs. You can mix them into fluffiness beforehand if you wish, but this is also not really necessary. I have just added them straight into the dough and kept mixing until fully combined.
This might take a few minutes but it is so worth to be patient. Better your fathead dough is mixed, easier it will be for you to roll the Keto Breadsticks.
Sixth Step: Shape and form
Once all is combined, separate the fathead dough into 8 pieces. Take each piece and with your hand roll it into small buns. In this step, you can still work each of the buns into a more smooth consistency for you to be able to roll the breadstic
In the meantime, heat up the oven and prepare your baking sheet covered with either a parchment paper or a silicone sheet.
Once all prepared, roll each of the bun into a log and place it onto a baking sheet.
Seventh Step: Season
When all of the Fathead dough is rolled into 8 logs, season it with extra Italian herbs and corse salt.
Bake and enjoy.
FREQUENTLY ASKED QUESTIONS AND ANSWERS
Can you replace coconut four in Fathead dough?
Yes, you can. The best replacement here will be with almond flour but you have to make sure you add much more. Coconut flour is very absorbent and dry and therefore you really need very little of it.

Can you make the fathead dough and freeze it until use?
I would recommend cooking it and then freezing rather than freezing the uncooked fathead dough.
Any dough, where cheese or cream cheese is involved, changes the consistency and you might have to have a really difficult time to shape it once unfrozen.
Bake the Keto Fathead Breadsticks and freeze those. It is much more convenient for you later as all you have to do is heat it up and enjoy.

Yes, they are heavy in dairy so store them in an airtight container in the fridge

Ingredients
- 3 Cups (375g) Mozzarella Cheese
- 4 Tbsp Creamcheese
- 2/3 Cup (80g) Coconut Flour
- 4 Eggs
- 1tsp Garlic Powder
- 1Tbsp Butter
- 1Tbsp Italian Seasoning
- 1tsp Sea Salt
Instructions
- Preheat the oven to 350F or 218C.
- Shred mozzarella and place it into the nonstick pot. Heat it up and while mixing it slowly with a spatula, make sure all of the mozzarella is fully melted.
- Once your mozzarella is fully melted, add butter and cream cheese and combine together while still hot.
- Switch of the heat and slowly one by one add all of the other ingredients. Keep mixing best with a plastic spatula and make sure all of the ingredients are fully combined into one dough.
- Add Eggs and combine fully until you get a perfect consistenc for working with dough
- Separate the fathead dough into 8 pieces. Take each piece and with your hand roll it into small buns. In this step, you can still work each of the bun into a more smooth consistency for you to be able to roll the breadstics easier.
- Let it sit for 15-30 minutes.
- Prepare your baking sheet covered with either a parchment paper or a silicone sheet.
- Once all prepared, roll each of the bun into a log and place it onto a baking sheet.
- Season it with extra Italian herbs and corse salt.
- Bake for 15 Minutes and enjoy.
Notes
- Be sure to use the prepackaged mozzarella cheese in this recipe. Fresh mozzarella contains too much water and your breadsticks won’t turn out as they should.
- You can chill the dough in the fridge for this time if you feel it is too difficult to work with.
- The way my oven works, I have after 10 minutes turned the baking sheet in the oven, so both of the sides are fully baked.

Thanks a lot for checking that out. This recipe is not mine and I have taken the nutrition Facts directly. But now after a bit of research and my own calculation, it really depends on what type of Coconut Flour you use. Some of them are pretty high in Carbs for some reason. I have checked the one I use (100g-22 Carbs) and with the entire calculation in My fitness Pal that comes to a total of 4 grams of Carbs per stick with 3g of Dietary Fiber. Thanks for your comment and I am going to change that.
