Almond flour desserts

Almost all of the desserts on my site are made with almond flour. It is my favorite of all keto flour substitutes for its neutral flavor and texture. 

Sweet breakfast is excellent for using almond flour. Thinnest simple crepes, fluffiest pancakes, extra delicious breakfast waffles, or crunchiest granola can be achieved. And all of this fully keto, low carb, sugar-free and gluten-free. 

When it comes to cakes, the answer is the same. Almond flour is the best keto flour to bake with. 

You can whip up a perfect chocolate chaffle cake, coffee cake, butter cookies, or shortbread cookies in no time. 

And when we come to the summer season, and frozen desserts are on a daily menu, my favorite is that you can make your own keto ice cream cones using exactly this nut flour. They are crunchy and identical to the real ones. I have even used them for making our ice cream sandwiches.

Cupcake recipes

As we are making gluten free cupcakes today from almond flour mixture, it would be fair to give you some different cupcakes you should also prepare for a big birthday cupcake theme. 

From our basic easy keto cupcakes to super moist chocolate cupcakes with Nutella frosting, holiday Santa hats cupcakes, or Christmas tree cupcakes.

Our almond flour cupcakes are moist, light and fluffy, same as all the recipes in here.

And on the way already comes another excellent recipe for lemon meringue gluten-free cupcakes.

By the way, they are all made with almond flour. Do you see, I love using and prefer almond flour in baking? Big time. My favorite. 

What is almond flour?

Almond flour is made from pure almonds. You can use a few types of this particular flour, and I have written extensively about almond flour in our keto flour substitutes article. 

In general, there are

  • Almond flour – is finely ground almond flour made with blanched almonds to get its bright white look. 
  • Almond meal – almonds, together with their skin, are grind into a fine almond flour.
  • Un-fattened almond flour – is generally leftover when making almond oil, where the oil is cold pressed and sold separately. Un-fattened almond flour is very similar to the consistency of coconut flour and is very dry. Great for thickening your sauces or soups. Not so great in baking, as it dries desserts a bit too much. 
  • Ground almonds – same as almond flour, just the grinding is not as powerful, and your ground almonds are a bit more coarse. On the other hand, they are much cheaper than almond flour. You can also make this yourself by grinding whole almonds in a magic bullet or coffee grinder. Ground almonds are mostly what I use in my baking as it is very similar to flour, much cheaper, and does not affect the baking process. And using those, you can easily make almond milk in a blender.

Almond flour vs all-purpose flour

One main difference between almond flour and all-purpose flour or wheat flour traditional cupcakes is its carbohydrate content. That is the main reason why regular flour is not allowed in our lifestyle or for those following keto diet.

The second major component is the gluten involved in all-purpose flour. As almond flour does not have any gluten in it, it is considered gluten-free flour as well and an excellent replacement for people with gluten allergies. 

Benefits of almond flour for baking

There are several benefits to why almond flour is great as a replacement in baking:

  • Very low carbohydrates
  • Gluten-free
  • It can be made at home by grinding almonds
  • It does not affect the taste of your baked goods s it is almost tasteless
  • Add the needed volume in baking without any grains involved
  • Does not raise blood sugar in diabetics as regular flour does
  • Is rich in nutrients and vitamins

What is the difference between almond flour and an almond meal?

The main difference between almond flour and almond meal is in its look. 

Almond meal is flour made together with the skin of the almonds and therefore is much darker, but on the other side, contains more fiber.

Almond flour is blanched almond grind into flour. 

Can I bake with almond flour?

Yes, you can bake with almond flour, and it is one of the best alternatives to regular flour to bake and cook with.

Does almond flour work for cakes?

Yes, you can bake beautifully airy, moist, and light cakes using almond flour. 

What does almond flour cake taste like?

If you are not adding any other flavors, almond flour on its own has a very neutral flavor. Nutty and sweet on a light site. 

Can I make cupcakes with almond flour?

Same as baking the best cakes, you can also use almond flour for baking cupcakes, and my blog is a great example as all of my cupcakes so far are made with almond flour. 

What is the substitute for almond flour?

Almost all nuts can be a replacement for almond flour. The best are hazelnuts and walnuts.

Seeds, such as sunflower, pumpkin, hemp, or sesame, are also great replacements.

Coconut flour needs to be weighed differently as it is very dry and using only about ¼ of almond flour is enough for baking. 

What sweeteners can I use in easy almond flour cupcakes?

In our cupcakes recipe, you can use almost any sweeteners you are regularly using. The best option is to use powdered sweeteners as they are much easier to dissolve on the batter. If you only have crystalized, simply grind them in your magic bullet or coffee grinder. 

Cupcake icing

As you see in my recipe, I have used meringue icing to fill them up. You can also use lemon curd, strawberry jam, peanut butter mousse, or cranberry sauce as a filling. 

Cupcake frosting

As a frosting, in those moist and delicious almond flour cupcakes, I have opted for meringue frosting, which is the same as icing, just whipped a bit longer and has a more stable structure.

In our sugar free cupcake recipe, I have not used any other toppings, as I have decided to use a torch on the meringue to give it that summer grilling look.

I have opted for a small batch as 6 cupcakes are just the right amount if you are single, a couple, or with a kid. And you will still have some left for the next day. 

You are free to double or triple the recipe or make mini cupcakes if you want to make more or bake for the party. Because once you make these almond flour cupcakes, you will love this recipe so much, that you will make them again and again.

STEP-BY-STEP INSTRUCTIONS FOR MAKING HOMEMADE KETO CUPCAKES  

First step: Prepare all ingredients

First, prepare your frosting using our recipe if you have not done it yet.

Heat the oven to 200 Celsius or 390 Fahrenheit. 

Prepare all of the ingredients for making low-carb cupcakes. You do not have to separate wet ingredients.

Make sure you have eggs at room temperature same as butter for the batter to mix correctly.

Second step: Whisk eggs and sweetener

Add the eggs into a mixing bowl.

Using a hand blender, whisk eggs first until fluffy and thoroughly combined.

Add sweetener and whisk again.

Third step: Add the rest of the ingredients 

One by one, add all other ingredients and make sure everything is thoroughly mixed and combined. 

At the end add vanilla and beat fully.

It is suggested not to over beat the batter as you might experience cupcakes sinking in the middle, but as we are going to make holes in the middle, it does not really matter how tops of the cupcakes looks.

I suggest to use blanched almond flour for these cupcakes.

Fourth step: Pour and bake

Layer your muffin pan with cupcake liners. I always like to use two pieces for each cupcake. One sticks to a cupcake while baking, and one stays for handling. 

Pour all your batter into cupcake liners to fill each to about ¾. The recipe should be just perfect for 6 standard-size cupcakes. 

Bake for 10 minutes or until toothpick inserted into the center of the cupcakes comes out clean.

Fifth step: Hole up and fill

Once your diabetic cupcakes are baked, let them cool completely, and use a knife, spoon, or cupcake plunger to make a small hole in the middle of a cupcake for filling.

Fill your cupcakes with meringue frosting or any filling of your choice.

Sixth step: Top up and fire

Once again, make sure you let the cupcakes cool completely.

Using a frosting bag, pipe up your frosting the way you like it.

To go even further, you can choose to lightly burn the top of the meringue frosting with a fire torch for that bbq summer look.

Tips and Tricks to make these cupcakes

  • Crystalized sweetener – blend into powder using your magic bullet of coffee grinder
  • Almond flour – can be replaced with ground almonds as well
  • Almond extract – can be added for stronger flavor of these cupcakes
  • Cupcake plunger – if you do not have one, use a small spoon or a knife to make holes so the middle of the cupcakes come out.
  • Cupcake liners – you can also use silicone liners
  • Dairy free – swap butter for coconut oil

What to serve with homemade cupcakes?

As I believe those vanilla cupcakes are so filling on their own, they do not need anything additional.

Can I make keto chocolate cupcakes?

Even though I do have a separate chocolate cupcake recipe for you, you can easily transform version of these cupcakes by adding 2 tablespoons of cacao in.

For making those cupcakes you can also use almond meal as it does not matter on the darkness.

Storing and freezing almond meal cupcakes

As I have chosen to make only 6 cupcakes from this recipe, you will hardly have any leftover cupcakes to deal with.

You could leave cupcakes at room temperature for 2 days. But if, store these cupcakes in an airtight container in the fridge for three to four days. No more. 

Freezing cupcakes is a great idea, but I would only freeze the unfrosted cupcakes. 

The meringue might liquidize after defrosting it.
