Authentic Alfredo Sauce
With this extra creamy, cheesy, and super-rich Italian Alfredo Sauce, I wanted to get into as much authenticity as possible.
Using Parmesan cheese, garlic and butter was a must. And as those are fully allowed in our lifestyle, this smooth creamy sauce is fully in.
No need to add any thickening agents as some might, because the parmesan cheese itself will thicken it to the exact texture you need it to be.
And as a Traditional Italian Recipe calls for fettuccine noodles, which we now have in a Low Carb Fettuccine Version. We are all set and ready to roll.
Low Carb High Fat
You might have already heard of people following a fully Low Carb and High Fat Diet LCHF in short.
I am not really a big advocate of this as I believe everything needs to be taken in moderation.
But if you are, this recipe is just the right choice for you.
Our Keto Fettuccine Alfredo Sauce with Homemade Noodles has a whopping 60g of Fat per Portion.
How easy is it to reach your limit with this?

There are almost no Carbs in Low Carb Alfredo Sauce itself. But if you take our recipe together with Keto Noodles, you do get a mere amount.
The whole recipe together with Noodles can be split into 2 Servings.
1 Serving of this fabulous Keto Meal contains 5g of carbs and 2g of Fiber. Giving you a total of 3 g of net carbs per serving.
Using a whole cup of Parmesan Cheese should thicken this sauce greatly. You might not see it at the beginning, but once the sauce cools down, the whole thickening process multiplies.
If you’re still not satisfied with the thickness you can use the following options to thicken the sauce a bit more:
Add extra grated Parmesan Cheese
Use Xanthan Gum, but really only a tiny pinch of it, otherwise your sauce will transform onto gooeyness
Adding a few teaspoons of Gelatine does the trick of thickening any of the low-carb sauces as well.

- Eggs

- Butter
- Garlic Cloves
- Heavy Cream
- Parmesan Cheese
- Fresh Parsley
- Salt & pepper

STEP BY STEP INSTRUCTIONS ON EASY KETO FETTUCCINE ALFREDO
First Step: Prepare Ingredients for Keto Noodles
Prepare all of the ingredients for Keto Noodles.
If you already have Noodles prepared or have chosen to use different types of keto noodles, please skip the next 2 steps and go directly to step number 4.
Second Step: Blend and bake Keto Noodles
Place all of the Ingredients for Low Carb Noodles into the Magic Bullet or a blender you have at home.
Blend until smooth consistency. Pour onto the baking sheet covered with parchment paper or a silicone sheet with edges.
Using your spatula, make sure all of the mixtures are spread evenly onto the sheet.
Bake for approximately 8 minutes.
Third Step: Shape Keto Noodles
Once the sheet is baked, gently peel the silicone or parchment paper and cut using various methods.
Either use a hand pasta roller, pasta machine or simply roll the whole sheet and cut with the knife.

Fourth Step: Ingredients for Keto Fettuccine Alfredo
Once your homemade noodles are ready, you can prepare all of the ingredients for Making Alfredo Sauce.
With regards to Parmesan cheese, it is best to grate it yourself as the parmesan already shredded from the supermarkets usually contains some kind of starches.
Smash garlic and chop parsley into small bits.
Fifth Step: Start Cooking with ingredients for Alfredo Sauce
Heat up the pot and place all of the butter to melt.
At the same time add Garlic and mix together.
Let garlic brown gently and get the roasting aroma.
Once the butter is melted, but not boiling, add heavy cream and start mixing.
Let cook for approximately 2-3 minutes in a saucepan over medium heat.
Add Parmesan cheese and stir constantly until the parmesan melts fully.
Sixth Step: Add Salt & Pepper
Flavoring Alfredo sauce with a teaspoon of salt and pepper will just enhance all of the taste.
Seventh Step: Add Parsley and mix
As of last, add chopped parsley and switch off the heat. Stir together.
Eight Step: Add Keto Noodles and gently mix together
If you are ready to serve this Keto Meal immediately, add your noodles and mix them together. No need to cook or heat them as the sauce will warm up the noodles.
If not, place Alfredo Sauce into the Mason Jar and store it in the refrigerator.
Tips and Tricks
Heavy Cream – Should be at room temperature to prevent separation while cooking
Parmesan Cheese – grate it yourselves as already pre-shredded cheese from the market contains always some kind of starch to keep the cheese separate and will add necessary carbs into your meal
Extra Smooth Alfredo Sauce – place the sauce into your blender before serving for that extra smooth creaminess

To store Alfredo Sauce is the best on its own without any noodles. Place the sauce into the Mason Jars or a Glass Container and store in the fridge for up to a week.

Again, I would suggest freezing the sauce separately without any keto noodles or pasta.
Once ready to consume, take it out of the freezer the night before and let it thaw naturally in the fridge.
