Grilling in Low Carb Life

Grilling when watching carbs does not have to be difficult at all. Just look at today’s recipe. When we have guests or grill on our own, I ensure a few burgers are always ready and our portobello mushrooms or avocado burgers are done instead of buns.

Additionally, when the kids are around, I prepare mini burgers, where I hide all of the veggies, and they love it.

Grilled Shrimp Marinade

If you wish, you can marinade your shrimp before grilling. I rarely do this as we use various sauces like ranch or Mexican salsa to dip ready-made skewers, and everyone can pick their favorite. I have also included a simple marinade if you wish to go with this extra step.

STEP-BY-STEP INSTRUCTIONS FOR MAKING GRILLED SHRIMP SKEWERS RECIPE

First Step: Prepare Ingredients

Get your jumbo shrimp, red pepper, zucchini, and button mushrooms. These are the main things you need to make your grilled shrimp skewers taste great.

If you use shrimp with the tail, leave the tail part on, as it is easier to handle.

Second Step: Marinade the Shrimp

If you wish to infuse the shrimp with flavor, you can marinate the shrimp before grilling. Make a special sauce by mixing olive oil, lemon juice, and the outside part of the lemon (we call it lemon zest). Add the shrimp to this sauce. Let them soak up the tasty flavors for around 15 to 20 minutes. This makes the shrimp taste really good.

Third Step: Make Skewers

Take your marinated big shrimp and put them onto the wooden skewers. You can also use metal skewers. Put pieces of red pepper, zucchini, and mushrooms between the shrimp. Use two to three large shrimp per skewer. This makes your skewers look pretty and gives you different yummy bites.

Fourth Step: Grill

Heat a grill or grill pan and make sure it is fully hot. It will shorten the time on the grill. Put your shrimp skewers on the grill. Cook the skewers for at least 2 to 3 minutes on each side, depending on the size of the shrimp. You’ll see the shrimp turn pink and not see-through anymore – that is when the shrimp are done and cooked right. Shrimp typically cook quickly, so do not leave them too long.

TIPS AND TRICKS:

  • Thawed shrimp – If you use frozen shrimp, ensure you thaw them fully.
  • If you want extra tasty shrimp, add some tiny pieces of garlic to your sauce or use grilled shrimp seasoning.
  • If you’re using wooden skewers or using bamboo skewers, let them sit in water for about 30 minutes before you thread the shrimp on them. It stops them from burning on the hot grill.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

What to Serve with Shrimp on Skewers?

These large shrimp skewers are friendly partners to many other foods. You can put them next to grilled asparagus to make a meal that is good for you. Or, you can make yummy shrimp tacos where the shrimp takes center stage.

I suggest refreshing tabouleh or summery fruity broccoli salad as a side salad

But serving them with pickled daikon or cucumber pickles takes your taste to a different level.

Do I Have to Cook Shrimp Before Grilling?

No need. You don’t have to cook the shrimp before putting them on the grill. They cook fast on the hot grill and become soft and tasteful, grilling them only a few minutes per side.

Can I Grill Shrimp in The Oven?

You can also grill shrimp on the stove or in the oven same as shawarma kebabs. You can still make delicious shrimp skewers if you do not have a grill.

Put the shrimp onto the skewers, just like before. Place the shrimp skewers on a sheet pan and cook in the oven. Cook the shrimp for about 2-3 minutes on each side until they turn pink and yummy. Remember, shrimp cook quickly, so do not leave them too long. You can still get that unique taste and flavor like grilling them outside.

How Do I Store the Best Grilled Shrimp Kabobs?

If you have some leftover kabobs, place the skewers in a container that closes very well and keep it in the fridge for up to 2 days. When you want to eat them again, warm them gently so they stay nice and tasty.

Can I Freeze BBQ grilled Shrimp Skewers?

You can freeze your BBQ grilled shrimp skewers. First, place the shrimp on a flat tray in the freezer until they are hard. Then, put them into a bag that is safe for the freezer. When you want to eat them, let them thaw and warm them up – they will still taste delicious.
