Childhood Coffee Cake aka Bublanina
This Keto Berry Coffee Cake will always remind me of my childhood.
Every time summer approached and all fruits started growing in the gardens, this cake was always a must. Every family, coffee shop you went to, the party you attended, and visit you were invited to.
This was even the first ever cake I learned how to make on my own as a kid.
My mum once wrote a recipe for me when she had to leave for a few days, and since then, it has stuck in my head.
And I guess I will never forget it.
It used to be 6 eggs, 6 tablespoons of flour, 6 tablespoons of sugar (I know), and 2 tablespoons of starch. And on top, whatever fruits you desire.
I know, I know.
But then we had no idea of a Low Carb or Keto and being able to bake with nut flours.
Coffee Cake Bublanina name
Once I had transformed this beauty into our lifestyle and wanted to share it with you, the most challenging part was to find a name.
In my country, we call it Bublanina, which in translation would be kind of Bubble Cake, but if I name that, I guess nobody will know what I am talking about. So I have done some research and realized that most of the Coffee Cakes look similar to this one.
And therefore, we have a Keto Berry Coffee Cake.
As kids, we always fought who got the biggest piece. And tell you, I took this cake (already a low Carb version) just last week to a friend’s house with 3 little kids, and the smallest one of them kept eating and eating.
I was amazed at how much she could have, but I guess because this cake is so light and incredibly yummy, it was a kind of winner in the kiddie’s world. And that is, most of the time, our aim. As long as our kids love it, we will make it over and over.
What is a Coffee Cake?
Coffee cake, especially in America, is a simple sponge cake or a sheet pan cake served with a cup of coffee. Different varieties exist with various flavors, sizes, and shapes.
Some are sprinkled with extra streusel, and some are filled with various fruits.
Although some coffee cakes might contain coffee, like our brownies, most coffee cakes, especially in the U.S., do not contain coffee.
The name comes from cakes served with coffee when you have visitors who would like to enjoy a morning coffee with something sweet.
Coffee Cake Recipes
Our farmers cheese bundt cake, spicy brownies, marble bundt cake, berry cake, or chocolate roulade can all be considered a coffee cake for the same reason I mentioned above. Served with coffee such as our cold brew coffee for breakfast or when you have visitors, those are all the coffee cakes you can alternate and never get fed up with.
How Many Carbs are in Keto Coffee Cake?
To get you pleasantly surprised, following our recipe, you will get a perfect 1 gram of carbohydrates per piece.
What berries to use for making keto coffee cake?
As you see with my recipe, I have made two identical cakes, one with strawberries and one with blueberries.
Apart from those two berries, you can pick from our low-carb approved fruits such as:

- Elderberries
- Lingonberries
- Cranberries
- Boysenberries
- Huckleberries
- Mulberries
- Dewberries
Rhubarb, together with strawberries, is a great mix as well.

STEP-BY-STEP INSTRUCTIONS TO LEARN HOW TO MAKE KETO COFFEE CAKE
First Step: Prepare all ingredients
Heat the oven to 160 Celsius or 320 Fahrenheits.
Prepare all of the ingredients needed plus berries of your choice.
Separate eggs into egg whites and egg yolks into individual bowls.
Sweetener is best powdered. If you only have crystallized, you can simply blend it in the coffee grinder or a magic bullet into a powdered version.
All other ingredients, including eggs, should be at room temperature to get the perfect fluffiness inside the cake.
Depending on the berries you choose, cut them into smaller pieces, wash, and fully dry.
Second Step: Egg Whites
Whisk your egg whites until fluffy peak forms. Set aside.
Third Step: Egg Yolks with sweetener
Whisk your egg yolks with sweetener until smooth, light yellow fluffy consistency. Add the egg whites you have made previously and gently fold into the egg yolk mixture.
Fourth Step: Rest of the ingredients
While whisking on low power, slowly add the ingredients such as almond flour, baking powder, water, and oil.
Whisk until all combined.
Fifth Step: Pour
Pour the whole coffee cake batter into your chosen baking sheet covered with parchment paper for easier cleaning afterward.
Choose the size of the pan according to how high you would like to have your coffee cake. Pick a smaller pan with elevated sites if you want a higher cake.
Sixth Step: Add Berries
Once everything is poured into the sheet, add all of your berries, making sure they are spread evenly.
Seventh Step: Bake
Bake for 30 to 35 minutes.
Tips and Tricks:
- Sheet pan size – depending on how high you would like to have your coffee cake, choose the size of the pan accordingly. Pick a smaller pan with elevated sites if you want a higher cake.
- Powdered sweetener – if you only have crystalized sweetener, you can quickly blend it into a powder version using your coffee grinder or magic bullet.
- Nutritional Info – the berries are not added into the calculation as everyone can choose their favorite. You can also make the cake without any berries, which is delicious as well.

Substitute for almond flour
If you do not have almond flour, you can use one of the chosen keto flour such as hazelnuts, sunflower seed flour, or walnuts.
Be careful with coconut flour as the texture and density are entirely different, and you would need only half of the amount. At the same time, you might need a bit of extra water as coconut flour is very dry.

Can you freeze sugar-free coffee cake with berries?
You can undoubtedly freeze this coffee cake without problems. I would suggest portioning it beforehand as it is much easier later if you need only a few pieces.
When needed, take it out of the freezer the night before and let it defrost naturally.

Can you tell me what size pan?

I do have to say, that I am not 100% sure, because I do have sides of the pan, which you can resize to whatever size you need. So I have taken a normal Full-size baking tray and have placed the sites up to as big as I could have. So a bit less then a full size, I would say.

In the photos, this looks like a layered cake, with berries in the middle. Is there some method you use when putting the batter in the pan to achieve that look? Or are the berries simply mixed in with the batter? There is no mention of berries at all in the recipe…. how much, when to add, etc. Thanks for clarifying.
