Spinach Roulade Filled With Smoked Salmon and Caviar

- Frozen Spinach
- Eggs
- Cream Cheese
- Hard Cheese
- Smoked Salmon Slices

STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE KETO PINWHEELS
First Step: Prepare Ingredients
Get all of ingredients ready. If you are using frozen spinach, let it fully thaw. Caviar can be replaced by your favorite filling.
Second Step: Spinach Base
Preheat your oven to 200 Celsius or 400 Fahrenheit.
With a hand blender, whisk your eggs first until fluffy. Once they are mixed, add unfrozen spinach.
Tip: Once your spinach unfreezes, squeeze as much water from it as possible. This will make your base much more condensed. And that is what we are aiming for.
Third Step: Mix and Pour
Again using your hand blender, mix thoroughly and transfer it to a baking tray covered with parchment paper or a silicone sheet. Using a hand spatula, make sure the mass is spread all over the tray evenly. Check the video for a better understanding.
Fourth Step: Grated Cheese
Using any hard cheese, make sure you grate it all at home. Refrain from buying already grated cheese because they all contain starch for the cheese not to go old and to hold separately. Always purchase a whole piece and grate it at home whenever you needed. It only takes a few minutes, but you will have grated cheese without any additions.
Sprinkle all of the grated cheese on top of the spinach-egg mixture. Make sure the cheese is spread evenly all over.
Place it into the oven and bake for 15 minutes.
Fifth Step: Toppings
Once the spinach roulade is baked, let it cool and spread cream cheese. Decide which way you will be rolling it and leave the ends of that part plain.
On top of the cream cheese, place the salmon slices evenly. This does not have to be loaded fully. Use all the pieces, and it is ok once you run out, even if it is halfway. You need a few layers only. As you see in the video, the last pieces of smoked salmon are small, so I have just filled empty spaces with them.
If you wish, season with salt and pepper to your taste.
Sixth Step: Caviar
Now comes my invention. We love caviar, but it can be something other than Beluga caviar unless you are going for an extra special VIP event. Most of the time, I use ordinary caviar from the supermarket. I always pick black, because of the color. It looks much nicer. But it is up to you what you will choose. You can as well skip this step.
Place all the caviar alined in one row at the beginning of the spinach roulade with a small spoon. The part which you will start rolling.
Once you have all the caviar spread, make it straight and even with the back of the spoon. This is easy since caviar is oily and easily formed. Check the video for understanding.
Seventh Step: Roll
Start rolling from the side where you have placed caviar and salmon. Using both hands, start rolling the whole roulade as you would proceed, for example, a keto sushi roll. Roll up the salmon roll tightly and keep rolling until the end.
Eight Step: Store
Once the whole salmon roulade is rolled, take a piece of plastic wrap and roll the salmon with it. Twist the ends of a cling film and place the entire piece into the fridge.
It is best to refrigerate overnight. But if you do not have that much time, after a few hours, the spinach roulade is ready to be served. In general, refrigerate until ready to serve.
Take out the plastic and cut thicker slices on a cutting board using a sharp knife. Garnish with chives and lemon zest.
Tips and Tricks:
- Salmon – you can also use salmon steaks cooked with horseradish mustard, parsley, lemon juice, and lemon zest on a skillet, pan with oil, or broiled. I like to pack fresh salmon fillet into the foil, drizzle some olive oil and a few shallots, and roast for a few minutes.
- Spinach – can be used fresh as well. Chop into small pieces or broil for a few seconds.
- Cream cheese – can be swapped with sour cream or cream fraiche.

Once you make it, it should be perfect and stored in the refrigerator for 4-5 days. It never really lasts that time in our fridge as it is a perfect keto snack or a low carb breakfast choice with us.
Can You Freeze Salmon Roulade?
You can, but cover it thoroughly with a cling wrap and in an airtight container. Otherwise, once unfrozen, this roulade will become pretty mushy.
