And there comes the best way to use them and preserve them all. Making extra crispy, baked, dehydrated cucumbers, aka dehydrated cucumber chips. 

What are cucumber chips?

Cucumber Chips are chips made from cucumbers you dry. Whether you make baked cucumbers in the oven, using an Air Fryer, sun drying them, or decide to go with dehydrating cucumbers, the choice is yours. 

Flavoring them simply with only salt, vinegar, or any of our suggestions mentioned below, they will be one of the best guilt-free keto snacks. 

You always get a perfect cucumber snack just with a bit different texture or crunch to the bite.

Cucumber chips are not only good but a perfect idea for the whole family. Those extra nutritions and low in calories chips are a great addition to a healthy lifestyle.

Why dehydrator?

I have chosen to use a dehydrator because a dehydrator is actually an oven, just baked at a low temperature.

A significant advantage of using a dehydrator is the simplicity of switching the gadget on and forgetting it. 

You don’t have to be afraid of burning your chips if set correctly. You do not have to be regularly checking. 

Simply set your timings, switch the dehydrator on in the morning, and you can enjoy the best, crunchiest, and crispiest ever cucumber chips or any other dehydrated goodies everyone loves by the evening.

STEP-BY-STEP INSTRUCTIONS FOR MAKING DEHYDRATOR-BAKED CUCUMBER CHIPS  

First Step: Prepare Ingredients

Prepare your cucumbers and salt. It is best to pick cucumbers of the same size for the dehydration to be equal. It is also great to get cucumbers as fresh as possible to get the best and the most nutrition.

Second Step: Slice Cucumbers

Using a meat slicer, mandolin, knife, or vegetable peeler, slice your cucumbers into approximately half a centimeter or quarter of an inch thickness. 

If too thin, they will become paper thin after drying, and if you cut them too thick, they will take a few days to dehydrate, and you might not get that crispiness we are all striving for.

Third Step: Layer slices

Layer all of the slices one by one on dehydrator racks, ensuring the slices are not overlapping. Depending on how many trays your dehydrator has or how many cucumbers you plan to dry, finish all the layerings.

Fourth Step: Flavor

Slightly salt the layered slices and let them rest for 10 to 15 minutes. This will help your cucumbers get additional moisture out as well. 

Do not add too much salt, as the salt flavor intensifies after dehydration.

Fifth Step: Tap to dry

Using a kitchen towel, lightly tapping your slices, soaks up all of the moisture your cucumber slices have produced. Keep drying them until your towels do not soak up the moisture anymore.

Sixth Step: Cover and Dehydrate 

Place your dehydrator trays onto the dehydrator machine, cover with the lid, and set on the lowest temperature, in my case 70 celsius or 160 Fahrenheit, for approximately 5 to 7 hours, depending on the thickness of your slices. 

During the dehydration process, it would be great if you could swap the trays every 2 hours for all of the chips to dry equally.

Tips and Tricks:

  • Salt – use sparingly as once cucumbers dry, the salty flavor amplifies
  • Oven Baked Chips – follow the same steps with a heated oven at 150C or 300 Fahrenheit and bake on a parchment paper-covered baking sheet for approximately 3 to 4 hours. 
  • Thickness – do not cut your cucumber too thin to avoid paper-thin pieces.

Substitute for Cucumbers

Instead of cucumbers, you can substitute the same way and make perfect Zucchini Chips or use celery, jicama, radishes, kohlrabi, parsnips, or daikon.

How do you get the water out of a cucumber?

The best way to get water out of your cucumbers is to sprinkle them with salt once sliced and, after approximately ten to fifteen minutes, soak up the moisture with your kitchen towel. 

This will shorten your dehydrating process significantly. 

How long does it take to dehydrate cucumbers?

Depending on the thickness of your cucumber slices, it should take approximately five to seven hours to dehydrate your cucumbers to a crispy texture. 

How do you store cucumber chips?

Placed in the glass container and properly sealed to avoid getting moisture in, those cucumber chips are great to be stored in your fridge or on a kitchen counter. 

How Long Do Cucumber Chips Last?

As no additional preservatives are added, I suggest using your homemade cucumber chips within 2 to three days. 

What do I do if I have leftover cucumbers?

If you still have some leftover cucumbers, look at making naruto rolls or fermented dill pickles

Can you freeze Cucumber Chips?

I would not suggest freezing your cucumber chips because whatever best way you seal them, they will retain the moisture back and become really soggy.

    • before you layer them on a dehydrator trays, place all of the sliced cucumbers in a bowl and sprinkle with salt and vinegar. gently mix together and then layer on a sheets and dehydrate.
