I have first discovered Oat Fiber when I started baking with Potato Fiber, which is very similar, but not available in the US. Ordered it and have realized that this particular fiber is really something we need in our kitchen.

I have made our Keto Farmers Bread and Soup Noodles with Potato fiber, which could be easily replaced by Oat fiber. I have also made Keto Fiber Noodles, where you do have a choice of adding spinach or turmeric for additional colors and flavors. 

I have even added Fiber into the Fathead dough instead of Almond flour and to my surprise got the best ever dough to work with and developed perfect Fiber Tortillas

The whole of Europe is built in a way, where you have to walk a lot to get from one place to the next and using a car on a daily basis is very rare. 

But let us stop talking and comparing.

How To Make Homemade Low Carb Fettuccine Noodles

Kitchen Gadgets Needed:

Ingredients Needed

STEP BY STEP INSTRUCTIONS FOR MAKING THE BEST LOW CARB FETTUCCINE NOODLES

First Step: Prepare Ingredients

Prepare all of the ingredients.

If you do not have Oat Fiber, you can replace it with Potato Fiber or Bamboo Fiber. 

With Bamboo Fiber add 1 Tbsp extra as this fiber is very light in volume.

Second Step: All Keto Pasta Ingredients into the jar

Add all of the ingredients into your Blender Jar, be it Magic Bullet or any blender you have at home.

Third Step: Blend all ingredients together

Blend all of the ingredients together until all are fully combined.

Fourth Step: Pour onto the sheet

Pour onto the Silicone Sheet with edges or a baking sheet covered with Parchment Paper. 

Try to pour only the amount to be enough to clever the whole surface. Otherwise, your pasta will be a bit thick

Fifth Step: Spread on the baking sheet and bake

Using a silicone spatula or any spatula, gently spread all of the mixtures to cover all of the gaps. 

If you have blended the mixture a bit longer like me, you might see some bubbles formed. You can gently try and bang the baking sheet against the table to get rid of most of the bubbles. I have not done that, unfortunately. 

Place into the oven and bake for approximately 8 minutes

Sixth Step: Peel the Silicone Sheet

Once the sheet is baked, place it onto the fresh parchment paper facing the Silicone sheet down. 

Gently peel the silicone sheet or parchment paper from the baked Noodles sheet.

Seventh Step: Option 1 – Hand Pasta Roller

The following steps are depending what way are you planning to cut the noodles. 

You can either use Hand Pasta Roller. You can also cut the sheet with Pizza Roller or roll the whole sheet and cut with a knife.

Eighth Step: Option 2 – Pasta Machine

If you do have a pasta machine, cut the sheet into the size, that fits and prepare the best ever Low Carb Fettuccine Noodles.

Tips and tricks

  • Fiber – you can replace Oat fiber with either Potato Fiber or Bamboo Fiber if you do not have Oat Fiber available. With Bamboo, Fiber, I would suggest adding 1 Tbsp as that fiber is very light in texture
  • 2 Ways – as you see in the video, there are 2 choices you can shape those noodles. Pasta machine or a Hand made Pasta Roller
  • Bubbles – If you have blended the mixture a bit longer like me, you might see some bubbles formed. You can gently try and bang the baking sheet against the table to get rid of most of the bubbles. I have not done that, unfortunately.

Once you cut your noodles, you can easily store them in the glass container in your fridge for up to 3-4 days. Anything longer, I would suggest freezing them.

Can you freeze Keto Noodles?

You can certainly freeze those Keto Noodles. Place them into the zip log Bag or a glass container and freeze portioned.

    2. Add all of the ingredients into your Blender Jar, be it Magic Bullet or any blender you have at home.

  1. Hi – once made, how do you prepare them for sauces? Do these just get tossed in sauce after baking and cutting, or do they get boiled before ready for sauce? What is the next step?

    • You only need to mix them with a hot sauce. They are already baked and ready to eat. If you like, you can warm them up a bit, but if a really hot sauce, then no need.

  2. How do you keep the oat fiber from clumping? I’ve made them twice now with the same problem. The mixture has clumps and is not thick enough to need spreading. I just pour it on the silicone mat and tilt the edges till it covers the whole sheet.

  3. I had to cook these for much longer at 300, maybe 15 minutes, just had to keep checking. I should have used a smaller tray, might get those jelly role trays, that would have made them thicker, but would have taken even longer to cook. Overall pretty good in the end!

    • It gets few trials to get it right. We all have different oven and different trays. Also sometimes, when you use tiny bit bigger eggs, it getss more liquid and needs to bake longer and vice versa.
