The idea of making this Beautiful Low Carb Purple Spread came to me when my daughters and I one day went for a Breakfast to a garden restaurant and ordered a sandwich. It was a beetroot sandwich with Salmon and avocado, but my daughter asked if they could skip salmon and get an egg instead.
And what came shocked us all. A beautiful loaf of Farmers Bread covered with this vibrant purple Beetroot Spread, topped from one side with mashed avocado and from the other side deep yellow scrambled eggs.

The combination of all 3 colors made it an unforgettable experience we will never forget.
It was so beautiful, that even if you do not like Beetroots or any of the above, you would love this breakfast only for the look of it. We all started taking pictures and I could not stop thinking about how it will look on my Blog.
And there I went. Asked what all they have used and the first thing I came home and started an experiment with mixing the ingredients together and calculating it all, so I can still fit it into our Low Carb Lifestyle.
This is how our Best Low Carb Oven Roasted Beet Spread Recipe came about.
I have already made it a few times and it is the best ever Low Carb Spread I can suggest to any of you.
As Beetroots are especially beneficial to people with Diabetes, this not really the lowest Carb Vegetable, should be added into our daily life.
Rich in Phytochemicals, beets have been shown to have regulating effects on our glucose and insulin.
Packed with antioxidants that aid in digestion, fiber, potassium, folate, and other nutrients there is no doubt, beets are great for our health in general.
Deep Purple Color of Beets is perfect as a natural coloring as well. It could be used for example in our Spider Web Eggs to get this awesome marble looking effect.
Beetroots are not one of the Lowest Carb Vegetables but taken in a small amount, they add so many health benefits into your body.
Living a low carb lifestyle especially if you are a diabetic, this root vegetable should be sparingly part of your regular diet.
Beets eaten on its own are indeed pretty high in natural sugar.
But in case of making this Easy Fast and Affordable Beets spread, serving contains only 4 g of natural sugar with 1 gram of Fiber included.
The healthiest way to make sure the beets get soft is by roasting them.
With roasting beets in the oven, they will lose the least nutrients and will add so many health benefits to your body.
To keep everything clean, the best way to roast beets in the oven is to wrap them in aluminum foil and bake. You do not have to peel them as the skin is easier peeled once roasted.
In case you do have a big Beetroot, cut it into smaller pieces as roasting in the oven takes approximately an hour.

But in the case with our Oven Roasted Beet Spread Recipe, there is a great tip.
Since our recipe already contains Creme Fraiche, you can just add the whole mixture into the mixer or a blender and Ta da.

To fully remove Beet stain from anything and everything is what we are all searching for when Beets are involved.
It was my issue as well before deciding on making this Low Carb beet Spread.
All of my kitchen gadgets are white and I could not even think about what I would do if the stains would not go.
As you can see in our video, I made sure not a single stain is left after making anything with beets.
It is important to:
Wear gloves when handling beets
Roasting beets, cover them with the aluminum foil for perfect clean handling
Use glass containers, which are fully washable
Make sure your kitchen gadgets are metal and not sprayed with colors.
But just in case you end up with some stains those tips might help:
Baking Soda – have baking soda on hand at all times. It helps in so many ways and it cleans your hands
Lemon Juice and Vinegar – helps enormously, in case you get some stains on your cloth. Just dab the spots with lemon and vinegar, let it sit for a few minutes, and rinse with water.
How To Make Perfect Roast Beets Spread
Kitchen Gadgets you might need:
- Glass Bowl
- Aluminum Foil
- Cheese Grater
Ingredients needed:
- Beetroots
- Garlic
- Creme Fraiche
- Horseradish
- Salt & Black Pepper
STEP BY STEP INSTRUCTIONS ON OVEN-BAKED LOW CARB BEETROOT SPREAD
First Step: Prepare all ingredients
Prepare all of the ingredients for easier set up.
Wash your beetroots but you do not have to peel them.
It is easier to peel the skin off the beetroots after they are roasted.
Second Step: Cut Garlic and Beetroots
Having prepared your aluminium foil, cut the garlic head into half and cover each half with aluminum foil.
The same applies to Beets.
If your beetroots are small, pack each one with aluminium foil.
But if you have a big beet as I did in my video, it is much better if you cut it either into quarters or smaller pieces, each being packed individually into a foil.
Since it really takes a long time for the beetroots to soften up in the oven, smaller pieces are a much better solution.
Third Step: Roast
Once all of your beetroots are packed in the foil as well as garlic, place them all onto the baking sheet and straight into the oven for roasting.
Depending on the size of your beetroots, roast them for about 45 minutes to an Hour on 200 Celsius or 400 Fahrenheit.
Fourth Step: Clean and Grate
Once your beetroots and garlic are roasted in the oven take them out, open and let them cool down.
When they’re cool you can peel the skin off the beads first.
In this step it is the best to put gloves on and use a paper napkin to clean the skin as you see on the video.
It is very easy and you shouldn’t have any problems with it.
Make sure your beets are room temperature before going into the next step.
Using a cheese grater great your beets one by one in a glass bowl.
Fifth Step: Add additional Ingredients
Once you grate all of the beetroots, take out the insights from the roasted garlic and add it into the glass bowl where the beets are.
Add remaining ingredients such as creme fraiche or cream cheese.
Depending on the spiciness add 1 tablespoon of freshly grated horseradish.
The sweetness of the beetroots will take most of the spiciness from horseradish so it really depends on your taste.
1 tablespoon of horseradish is perfect for our family with our daughter as well.
But to my liking I would add one more tablespoon of horseradish.
A pinch of salt and black pepper and you’re done.
Sixth Step: Mix and Enjoy
Using a fork mix all of the ingredients together and your beautiful simple and easy beetroot low carb spread is done in no time.

Peeling the skin – the easiest way to peel the skin of the Beets is after roasting and with a piece of paper napkins.
