Using shirataki noodles in our lifestyle was my first choice when we transitioned into the low carb way of living. 

There are various recipes on the net, but I will suggest some of mine. 

Apart from this stir fry noodles recipe, I have made ramen noodles that are out of this world and filling like no other. Onion boil is also a good recipe for you to try.

Using shirataki rice was a development of my childhoods favorite stuffed peppers cooked in a delicious tomato sauce.

Since then, I have slowly started experimenting with various pasta alternatives, but shirataki noodles have and still are in our pantry at all times. 

Our stir fry noodles using guilt-free shirataki with 0 carbs and 0 calories that absorb all of the flavors will be a staple in your house. This fully low carb, gluten free, grain free, and diabetic friendly chicken stir fry is a perfect mixture of deliciousness and healthiness in your life.

What Are Shirataki Noodles?

Shirataki noodles are made from konjac yam root aka glucomannan soluble fiber well known in Japan. You might also hear of them from the names such miracle noodles or konjac noodles. 

They are gelatinous, translucent noodles very similar to traditional Japanese noodles made from yam flour or rice noodles. They can be added instead of any noodles into ramen, such as udon noodles or angel hair, into one of your soup recipes

Those noodles makes you feel full without raising your blood sugar and are a great addition to a weight loss journey. This is also a recipe that can help you reduce food wastes.

These days, you can purchase them in various shapes and thicknesses. Shirataki rice is one type that is very popular in the world of 0 carbs and 0 calories.

Different Types Of Shirataki Noodles

Apart from the different shapes such as spaghetti, fettuccine, angel hair, tagliatelle, udon, and rice, they also come with slight flavors such as spinach or wok noodles. 

They can be found in dry and soft “wet” forms in Asian markets and supermarkets. When purchased wet, they are packed in water. They usually have a shelf life of up to one year. Some brands may require rinsing or par-boiling as the water they are packaged in has an odor that may be unpleasant to those not accustomed to it.

Tofu shirataki noodles are another favorite of mine, where extra tofu is added, making the noodles soft and almost identical to the wheat noodles we are used to.

The great advantage is that they soak up all the flavor of the dish, and therefore you can use them whenever and however. Even on a sweet side. We love them just with curd cheese and sweetener.

Where To Buy Shirataki Noodles?

Different variations in the shops are available not only in Chinese markets but now more and more also in the health shops, bio markets, or major grocery stores. You can also order them online and keep them in the fridge for quite some time. You can buy a ready-made one, but that never tastes like your own homemade.

How To Cook Shirataki Noodles?

Cooking those noodles is super easy. They soak all of the flavors from the meal you make and do not need an extra cooking process beforehand. If you are not using meat, your food can be on the table in less than 10 minutes.

The most important is to wash them to remove all of the water they are packed in as it has a powerful fishy odor. 

All you have to do is drain excess liquid and wash noodles well under warm or cold running water and add to your meal 1-2 minutes before finishing the cooking process. You can further dry them using a paper towel.

The best part of shirataki noodles is that they contain 0 carbohydrates and 0 calories.

The nutrition is very minimal without protein, but on the other site, they fill you up for a very long time.

Tofu shirataki, where a bit of tofu is added for the softness in texture are very low in calories per serving with a minimal amount of carbs.

Low Carb Stir-Fry Chicken With Shirataki Noodles

Today I am making one of the variations we like for dinner, and this time the recipe is coming with a video. 

Kitchen Gadgets needed:

  • Cooking Pan
  • Sieve

Ingredients needed:

  • Chicken
  • Shirataki Noodles
  • Onion
  • Mushrooms
  • Asparagus
  • Coconut Oil
  • Salt & Pepper

STEP BY STEP INSTRUCTIONS FOR MAKING KETO CHICKEN STIR FRY SHIRATAKI NOODLES WITHOUT SAUCE

First Step: Prepare Ingredients

First of all, prepare all the ingredients.

Cut your chicken into small pieces and chop an onion. 

Slice your mushrooms and cut asparagus as well.

Second Step: Coconut Oil and Onion

On the cooking pan, add coconut oil and let it melt.

Add your chopped onion and let it caramelize on a medium-high heat.

Third Step: Chicken, Salt, and Pepper

Once your onions are caramelized, add chicken pieces, salt, pepper, and cook the chicken until almost done.

Fourth Step: Mushrooms

Once you see the chicken is done, add your sliced mushrooms and mix while still cooking.

Fifth Step: Asparagus

Freshly cut asparagus added to the pan and tossed towards the end will ensure the asparagus is not overcooked.

Sixth Step: Shirataki Noodles

The last step comes Shirataki noodles. 

As you see in the video, I have picked Tofu Shirataki, but you can use any noodles of your choice or shape.

Most of the packages come in a liquid, and this is a big step you have to follow before you add the shirataki to your meals.

Wash your  noodles under the hot water, making sure all of the liquid has been washed out otherwise, you will retain an unpleasant smell.

Once your noodles are washed, you can add them directly into the dish as they will soak up all of the flavors from the chicken stir fry.

Sprinkle with a bit of sesame seeds or broccoli sprouts for a final touch.

  1. Thank you for this recipe. I have not tried Shirataki noodles. I am not a fan of pasta variations. I generally stick with the regular stuff if I’m really craving pasta, then I suffer the consequences. Always looking for a new alternative.

      Shirataki noodles do not have any calories and Carbohydrates. So if you are sticking with Keto or a low carb, they are really good alternative. Should try them once.
