This basic Keto Cupcake Recipe is used all the time with variations. I will never make another basic cupcake recipe that is keto because I believe this recipe offers you everything you have ever dreamed of. 

I have made Pound cake with it, our Chocolate Cupcakes with Nutella Frosting, and I am about to publish for you Lemon Meringue Cupcakes with Lemon Curd inside as well as almond flour cupcakes with meringue icing

You can also use them as a base for our Christmas Tree Cupcakes or Keto Santa Hats Cupcakes.

How many carbohydrates are in Keto Cupcakes?

Our recipe for sugar-free cupcakes contains only one gram of total carbohydrate per piece. With one gram of fiber, you come to a whopping zero net carbs in super delicious, moist, soft, and fluffy cupcakes.

For the last four or five years, I have used only this recipe every time my daughter asks for a cupcake. All you need to do is add a bit of spice to it to change the taste.

Those cupcakes or sweet muffins are so extremely easy to make and could be used for really anything. I have even made a few cakes with this recipe. 

Sweeteners used for Keto Cupcakes

Keeping those cupcakes sugar-free at all times is the primary goal. Using only the best sweeteners from our whole collection of sugar substitutes is super simple. Pick the one sweetener you like, have at home, or use regularly, and you are good to go. 

Because of diabetes, it is pretty essential to have minimal carbs and maintain delicious diabetic cupcakes.

How do you make keto cupcakes?

  • Eggs

  • Baking Powder

STEP BY STEP INSTRUCTIONS FOR MAKING QUICK AND EASY KETO CUPCAKES

First Step: Prepare your Ingredients

Heat your oven to 200 Celsius or 390 Fahrenheit.

At the same time, prepare all of your ingredients, which are almond flour, eggs, butter, sweeteners, and baking powder.

Almond flour can be replaced with blanched almonds. Butter should be at room temperature for easy whisking.

Second Step: Whisk your Eggs

Add eggs to a container for your hand mixer and whisk them until fluffy.

Third Step: Add Rest of the Ingredients

One by one, add all of the other ingredients.

Fourth Step: Whisk Fully

Whisk thoroughly until all combined, and you have no lumps in the batter.

Fifth Step: Fill and bake

Fill your baking cupcake muffin tin covered with cupcake liners. I always love to use two liners as one usually sticks onto the cupcakes, and the second layer stays for handling and prettiness. 

Bake in the oven for 10 minutes and let it cool.

If you plan to use frosting or icing, make sure the cupcakes are thoroughly cooled. Otherwise, all will melt.

Tips and Tricks:

  • Almond Flour – can be replaced with ground blanched almonds
  • Vanilla extract – optional
  • Substitution for almond flour – sunflower seeds flour
  • Adding Icing – only once the cupcakes are fully cooled. Otherwise, any frosting will melt.

I have tried to make a recipe for a smaller family or a single person, where you get from our recipe 6 standard size cupcakes. 

You can easily double the recipe or use smaller cupcake liners to get mini cupcakes. 

How do you store Keto Cupcakes?

Those Diabetic Cupcakes are ideally stored in your fridge for 3-4 days. Anything longer, I would suggest freezing.

Can you freeze Sugar-Free Cupcakes?

Without a doubt, you can freeze those keto cupcakes. Place either in a glass container or a ziplock bag. They are perfect for up to 6 months or more.

Once you are ready to enjoy them, I would suggest taking them out of the freezer the night before and letting them thaw naturally in the refrigerator.

    • Dear Leonie,

      Coconut flour is much denser and dry compare to any other low carb flours. Plus the taste would be different. I have not tried it myself, but if you do insist, give much much less of it.

  1. You don’t add the butter anywhere in the cupcakes. Yet it’s in the list of ingredients. Is it supposed to be in the cake?

      Yes, it is supposed to be in the recipe. Probably it was not really clearly written. I have just updated it. If you see the video I have made, the butter is added together with the almonds and dry ingredients. Thanks for pointing that out.

  2. Great recipe and the closest I’ve tasted to regular full sugar cakes. The only issue I had was the paper cases I baked them in sticking to the cake but I’ll get some less flimsy ones next time. They’ll definitely be a regular bake for me

      There must have been something, you have done differently. Those cupcakes come out all the time perfectly and extra moist. Maybe the size of the eggs? I wish I can help.

  3. The recipe states “powdered sugar”. Is this regular powdered sugar? I’m also wanting to make a margarita cupcake. Do you have any advice on what to add to your base recipe? Thank you! I can’t wait to try these.

  4. Great!! I was going to use chocolate frosting but my husband wanted cream cheese frosting. They were fabulous! I use silicone cupcake liners and baked for 15 minutes.

  5. I was looking for a cupcake recipe since I got a mini muffin pan and decided I needed to make something for its first use. The only issue I had with this recipe is the 1,5 teaspoons of baking powder, how much is that? Since I couldn’t figure it out I made a different recipe and I’ll come back to this 1 later. I’m a novice cook and baker so need explicit directions.
