Vegetable Lasagna
I am not here to force you to make the Keto Lasagna sheets if you do not want to and therefore offering some other suggestions as well.
What are some good vegetable lasagna recipes?
Instead of homemade Keto Lasagna Noodles, you can easily use sheets of Low Carb vegetables that are just as great for the casserole.
Choose your favorite:
- Zucchini Lasagna – slice fresh Zucchini lengthwise to get the layers
- Eggplant Lasagna – depending on the size, Eggplant is perfect to thinly cut either lengthwise of circles as well
- Cabbage Lasagna – For sheets of cabbage, I would suggest dipping them for a few minutes into the boiling water. They will soften and will be much more pliable to layer with
- Squash Lasagna – Thinly sliced Pumpkins or Squash are also a perfect alternative from Low Carb vegetables to layer
- Palmini Lasagna – store-bought Palmini Lasagna could be a great tip as well

Sixth Step: Start layering Bolognese Sauce and Lasagna Sheets
To layer the whole dish, start with Bolognese Sauce on the bottom of the casserole.
Add a bit of grated cheese and a layer of Lasagna Sheet.
Continue layering until you use all of the Lasagna Sheets or your Casserole is full.
Lastly, top it up with the remaining Meat Sauce.
Seventh Step: Top up with Grated Cheese and Bake
Top up your whole Low Carb Lasagna Casserole with Grated Cheese fully.
Bake at 200C or 400F for approximately 40 minutes.
Tips and Tricks:
- Cheese – as a cheese topping, you can use any hard cheese, parmesan, or even Mozzarella you have grated yourself. Any pre-grated cheese bought from the supermarket contains starches to hold the cheese separate and therefore I always advise you to grate your own cheese. You can even try layering with Ricotta Cheese to get that extra special touch.
- Meal preps – If you are making this Keto Dish as a Meal Prep, I would suggest letting the casserole cool completely and place it into the fridge for a few hours. This will harden the sauce fully and it will be much easier to cut into the appropriate portions.
FREQUENTLY ASKED QUESTIONS AND ANSWERS

- Zucchini Lasagna

How do you store Lasagna?
To store Low Carb Lasagna with Ground beef is super easy. I normally leave it in the casserole dish where the lasagna meal was baked. Cover it with cling film and store it in the refrigerator for up to 3 days.
Once your casserole is cooled and all of the sauce hardens, you can portion it and store it in the freezer for longer.

You can certainly freeze the whole Keto Lasagna with Bolognese Sauce.
I would advise letting the whole dish cool down and placing it in the fridge for a few hours.
After that, it is much easier to portion the lasagna.
Store in a glass container separately for easier Meal Preps or Portion Control.
