Story of my dish
I met a friend. I needed to figure out what to cook for dinner. She suggested this cabbage dish, which she had made the day before. After listening to her recipe and already in my head turning it into something delicious, I immediately wanted to have a bite.
Straight went to the shop to buy some ingredients, low-carb vegetables and cabbage for today, and went on cooking. First, I have made it a bit different and more complicated. I made it all in a big pot and then moved it into a casserole to bake the cheese in the oven. This caused a lot of mess in the kitchen, which I do not like.
But Guess What.
My family loved it. They said it was terrific.
A week later, when I asked my husband what ld cook for dinner, he suggested the casserole from last week since it was so good.
That was an immediate sign, I have to make this recipe for all of you, so everyone can enjoy it. Not only my family. And here you go.
Our cheesy cabbage beef casserole was born.

How to Make Best Keto Cabbage Beef Casserole?

STEP-BY-STEP INSTRUCTIONS ON THE BEST CHEESY LOW CARB CASSEROLE EVER
First Step: Prepare Ingredients
Prepare all of the ingredients.
Cut meat into small pieces, which will help you to cook the beef fully tender.
Slice the cabbage into the thinnest possible slices.
Mushrooms should also be cut into small, tiny pieces so they are easily spread over the dish.
Add spices all into a bowl for easier cooking.
And remember to grain the mozzarella or your favorite cheese with a grater.
Second Step: Brown Onions
Heat the skillet and add oil. Once the oil is hot, add onions and let them caramelize.
Third Step: Add Beef
Once the onions are cooked, add pieces of meat and cook for approximately 10 minutes until all of the sides of the pieces are cooked.
Fourth Step: Add Mushrooms
Once the meat is brown from all sides, add mushrooms cut into small pieces and cook for another 5-10 minutes.
Fifth Step: Spices
When it is time to add spices, switch off the cooking process for this step.
Some spices, especially sweet paprika, tend to burn very fast, and when added to cooking meat, they can change the taste. They become bitter.
Once you add all the spices, mix them thoroughly into the meat and mushrooms.
Sixth Step: Tomato Sauce and Mix
At the same time, add the tomato sauce and mix thoroughly. There is no need to add any of the liquid, be it water of broth, since cooking this casserole dish for longer, meat and cabbage will add more moisture, which will be enough for the dish.
Seventh Step: Add Cabbage and Cook
Now is the time to switch the heat on again. When the meat, spices, and sauce are thoroughly mixed, add top sliced cabbage, cover with the lid, set the cooking to medium-low and let it cook for approximately one hour.
Depending on your beef size, you can adjust the cooking time accordingly.
Eight Step: Fully Mix

Ninth Step: Cheese and Bake
Once all the cabbage is fully mixed with beef, top it up with grated mozzarella and place it into the oven for 10 – 15 minutes. Here, you only need the mozzarella to melt and brown a bit. Watch out; baking cheese can turn beautifully melted to burned in minutes.

- Beef Size – Depending on the size of the beef, you can adjust your cooking time. The smaller the pieces – the shorter the cooking time it requires. If you are unsure, check the meat’s tenderness before adding the cheese.
- Mushrooms – if you do not have fresh, you can also use dried mushrooms.
- Cheese – I have used mozzarella, but you can choose whatever cheese you like.
- Cheese Grater – Make sure you always buy a whole block of cheese and Grate that at home. First, you will get the freshest grated cheese you can get. Second, most of the already grated cheese in the supermarkets is filled with starches, so the cheese does not get stuck to another.
- Cabbage – Slice it onto the thinnest slices you manage. This will help in taste enormously. If you wish, frozen cabbage will work as well.
- Spices – My blend is the spices I use the most, but you can experiment with spices you like. You can even add granulated garlic for extra texture towards the end or five spice powder for a bit of Asian feel.
- Cheese baking in the oven – be careful and watch it. It can turn from beautifully melted cheese to burned cheese in minutes.

Is Cabbage Keto Friendly?

You can replace the beef pieces with minced meat in this recipe. Your cooking time would be a bit less. Adjust the ground beef casserole recipe to cook for only 30 minutes.
What Spices Are Best for A Casserole Dish?
It depends on what exactly casserole you are planning to make. Mexican? Add more Mexican spices. Indian? Add more of the Indian nature spices. It is entirely up to you.
In our case, I love adding sweet paprika to most of my dishes with Turmeric. I feel those add a great flavor to the casseroles.
Adding ginger, for example, is not really in our daily cooking because my daughter is not fond of this spice, but if a small amount is invisible and mixed with other herbs, people will never know.
The best is to store this casserole in the fridge, in the same skillet dish you have baked it in. You do not have to transport it into another dish unless it does not fit into the refrigerator.
You can store it for up to 2-3 days. I would not suggest longer.
Can I Freeze This Low Carb Cabbage Casserole?
You can undoubtedly freeze it. Bear in mind that it would be best to store it in a sealed container.
Once you are ready to eat, take it out of the freezer the night before. Place it in the refrigerator, where it will slowly unfreeze.
Once ready to serve, place it into a smaller casserole dish and straight into the oven until fully warm. You can add freshly grated cheese or dried onion for additional freshness.

So I tried it tonight and I don’t get it- with only 1/2 cup of tomato sauce, it was dry as heck. I had to add a bit of water to the bottom of the pan or else it would stick and even then, I had to cut the time in half because it was sticking to the pan, even at low to medium (more on the low side) heat. Yours looks so saucy- mine wasn’t even close. strange!
Usually cabbage releases even more liquid in, so there should not be a problem if cooking it on a medium low. Probably the tomato sauce was less liquidy, which can happen with various different brands. Sorry, this did not worked exactly.

This dish was OK but I needed to add chicken broth. Otherwise it would have been extremely dry.
It really depends on how long you are cooking the cabbage. Usually there should be enough liquid coming out from cooked cabbage.
What cut of beef did you use for this?
I actually always just buy what is available. Lots of time, I pick steak pieces and cut into smaller cubes.

I am sorry, but have not heard of it. I use tomatoes all the time and do not see any problems with it.
