How do you make a Keto Casserole?
Casseroles are easy to make as all you have to do is add some layers of protein, low-carb vegetables, lots of cheese, and some kind of sauce. It is baked in the oven, and it always looks extra delicious and super cheesy.
Brussel Sprouts
Do you like brussel sprouts?
I never did.
Neither did my family.
I had never actually made brussel sprouts until we started our low-carb lifestyle.
I guess I never knew exactly what to do with them and how to prepare them properly.
What are Brussel Sprouts?
Brussels Sprout is one of the few vegetables that grow even when your garden is covered with snow.
Those tiny buds of mini cabbages grow on tall stalks, and you can get approximately 60 to 80 spouts from one single branch.
They have a pretty long shelf life in the refrigerator and are very popular, especially in autumn and winter.
How do you clean brussel sprouts?
To clean Brussel Sprouts is super easy. You have to cut the end of the bud and peel one layer of the leaves. Wash them under warm water, and you are ready to prepare.
How do you get rid of the bitterness of Brussels sprouts?
To get rid of the bitterness of Brussels sprouts is to simply cook or bake them.
Blanched Brussel Sprouts help dearly as well.
How do you make Brussel sprouts tender?
Brussels sprouts become perfectly tender by blanching them for a quick 5 minutes and immediately immersing them into the iced water to retain the beautiful green color.
You should blanch Brussels sprouts even before roasting them to retain their tenderness and crispiness.
How do you freeze fresh Brussel Sprouts?
You should blanch your brussel sprouts for about 5 minutes before freezing them.
Once blanched, place them immediately into iced water and they are ready to be stored in your freezer or continue with one of the recipes.
It is not advised to freeze your brussel sprouts without blanching them as they will become very dull, and they might change the color into brown and not good-looking.
Are Brussel Sprouts Keto?
Brussel Sprouts are among the top low carb and keto vegetables to use in our lifestyle.
They are also a great addition to our lifestyle because of their Low Glycemic Index.
With 86% water content and almost zero fat with a minimal amount of carbohydrates, they are on top of the vegetables used.
Brussel Sprouts Carb
As already mentioned, brussel sprouts keto has minimal carbohydrates intake.
The whole cup filled with brussel sprouts, which is approximately 90 grams, contains only 8 grams of carbohydrates.
Au Gratin Brussel Sprouts
As our recipe requires twice baking with getting the best crust from additional cheese, I believe this recipe can be considered as well as brussel sprouts gratin.
It has a perfect crust once baked for the second time, and nobody can refuse its deliciousness.

STEP BY STEP INSTRUCTIONS FOR BEST CHEESY KETO BRUSSEL SPROUTS AU GRATIN
First Step: Prepare ingredients for Brussel Sprouts Casserole.
Prepare all of your ingredients for the keto casserole.
At the same time, preheat your oven to 200 Celsius or 390 Fahrenheit.
Make sure you buy a block of hard cheese and grated at home as most of the store-bought grated cheese contains additional starches with lots of carbohydrates.
Second Step: Clean and Blanch your Brussel Sprouts
Clean your brussels sprouts by cutting the end of the buts and peeling the outer layer of the leaves. Wash and place into the boiling pot of water for approximately five minutes.
This blanching will soften them slightly and retain the beautiful green color while baking.
After five minutes, quickly place them into the ice-cold water for the color to remain. For more precise steps, you can check our video attached.
Third Step: Whisk eggs and add salt and pepper
In the meantime, add eggs into a mixing bowl and whisk them properly.
At the same time, add salt and pepper.
Fourth Step: Add Sour Cream and whisk
Once your eggs are whisked, continue adding sour cream and mix thoroughly.
Fifth Step: Add Grated Cheese and whisk
As the last ingredient, add your grated cheese and ensure the whole mixture is smooth.
Sixth Step: Spread Brussel Sprouts onto the Casserole dish
Depending on the size of your casserole dish, spread the brussels sprouts evenly around.
Seventh Step: Pour mixture and bake.
Gently pour the mixture onto the brussels sprouts covering them all.
Place into the oven and bake for approximately 20 minutes.
Eighth Step: Add extra Grated Cheese and bake
After your Keto casserole has been baked, take it out of the oven.
Spread the rest of the grated cheese on top.
Place again into the oven and bake for 10 minutes until the cheese becomes golden brown.
Ninth Step: Enjoy
You can enjoy this Brussell sprouts casserole immediately or store it in your fridge for later.

Brussels Sprouts seem to be one of those things you either love or hate. I don’t like them much compared to other veggies. I do like this recipe though. Also I don’t like to cook much, but bis is really easy to make.
I also used diced bacon bits for some more meat. And used the sauce and cheese with other frozen veggies. Heat up the veggies for 2-4 min. in the micro (or pot on a stove, if you prefer). Don’t cook the veggies too hot, just heat them up enough so they’re not stone hard frozen anymore. They’ll be cooking more in the oven later anyway. While waiting for the veggies in the micro I prepared the sauce and put it all together like that. Yesterday I wanted even more than diced bacon bits and had to use up some ground beef. So I heated that up in a pan, heated up some mixed frozen veggies in the micro, put the veggies in the baking form, added the well cooked ground beef (use a spoon or something, if you want to mix up the veggies and beef more or don’t, if you want layers).
If I’m lazy and want some veggies, this is my go to now. As suggested above, variations of veggies are possible and basically endless. Thanks a lot for posting this!
I wanted a healthy option for our Super Bowl party, so I tried this out the other day, and it was great! I love how easy it was and I know that nobody will realize it’s keto. Will be making it again for the party. Thanks so much!
I used heavy cream instead of sour cream for this recipe. I loved the creamy texture and the added garlic powder gave it a nice kick. The Brussels sprouts were also tender and the cheesy topping was just perfect. Delicious recipe!
Adding this to my favorites! It’s another recipe where kids won’t even realize they’re eating veggies because it’s so delicious. I actually used different kinds of cheese leftover and it did turn out really good. Thanks for all the tips!
Love this recipe. I had never had Brussel spouts like this in a casserole, and I loved it. It’s similar to broccoli casserole but better with the Brussel sprouts.
Keto, from everything I’ve seen, if Atkins revamped. I did Atkins back in the day and it worked very well. Whatever you call it, it works. Nothing new under the sun, I guess.
Brussel sprouts are a new love of mine – it took time but I’m finally on board! Cannot wait to try this cheesy version!
Dear Sharon,
Same here. I never really liked them, neither my kids. But with this recipe and few others it is becoming pretty popular.
