As my daughter is diabetic, I have the pleasure and opportunity to test all of my recipes this way. And believe me. Not a single spike.

Caramel Sauce from Condensed Milk

Before I dive into the actual recipe and its tips and tricks, I would like to mention what I have just learned. 

Apparently, if you place a can of condensed milk into the simmering water for approximately three hours, you get a perfect caramel sauce without doing anything else. 

This tip works with ordinary Condensed milk, and I am unsure how it will react with keto Condensed Milk.

I have a Homemade Sugar-Free Condensed milk prepared, and maybe it will be worth the shot to experience with this idea.  

Dairy-Free Caramel Sauce

In our Sugar-Free Caramel Syrup recipe, I have used Heavy Cream, which you easily replace with a Coconut cream or full-fat coconut milk if you are looking for a Dairy-Free Version.

Additionally, coconut cream adds the perfect flavor to this Dairy-Free and Sugar-Free Caramel Syrup. 

Homemade Sugar-Free Brown Sugar 

As you see in the recipe card, the main ingredient for our Sugar-Free Caramel Syrup is Brown Sugar you can make at home in seconds. 

I love this choice because it gives you that extra brown sugar flavor into this keto caramel sauce and reduces your amounts of ingredients and carbs as well. 

Using Yacon Syrup for flavor and color is the best choice, especially when you are strict in counting carbs or are Diabetic. 

As a base white sweetener for this homemade sugar, you can use various choices I have mentioned in the actual post. But I am going to sum up for you once more below. 

What sweetener to use for Caramel Sauce?

In general, you can use your preferred sweetener or a sweetener you have at home. 

Some work brilliantly with this recipe. Some are not so great. But each of the sweeteners you will use is ok with maybe a few modifications. 

My first and the most preferred one is Allulose. 

  • Allulose Sweetener is the best as it retains its caramel texture. It also caramelizes like an ordinary sugar would if used for further baking, such as making your toffees.  
  • Xylitol is a second choice, although it does contain a tiny bit of carbohydrates and is poisonous to dogs, which you have to watch out for if you have any around the house. 
  • Monk Fruit Sweetener is also a great alternative and even better if you can get Monk Fruit blend with Allulose. Both of those sweeteners add extra gooeyness to the syrups.
  • Erythritol is the last and least favorite choice for making your own homemade Keto Syrups, but it is also an option. 

Erythritol is not a preferred sweetener in making liquid sweeteners because it crystallizes back once cooled. Of course, you can reduce the crystallization a bit, but you might still have this problem.

Using Powdered Erythritol and distilled water might help. If it recrystallizes, a simple reheating on low heat will solve it.

What alternatives can you have with a Homemade Sugar-Free Syrup?

This Keto Caramel Sauce Recipe is so versatile that you can also experience various flavors and options.

You can make:

  • Bourbon Caramel Sauce – adding few Tablespoons of bourbon into the mixture
  • Dairy-Free Caramel Sauce – replacing heavy cream with coconut cream
  • Condensed Milk Caramel Sauce – cooking your condensed milk until a super smooth caramel sauce appears
  • Caramel Rum Sauce – few tablespoons of Rum is all you need
  • Salted Caramel Sauce – use salted butter instead or a regular
  • Chocolate Caramel Sauce – adding our Chocolate sauce and blending it
  • Coffee Caramel Sauce – mixing a shot of piccolo into the caramel syrup

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE SUGAR FREE CARAMEL SAUCE

First Step: Prepare Ingredients for Keto Caramel Sauce

Prepare all your ingredients for making the best Sugar-Free Caramel Syrup. 

For Sugar-Free Brown Sugar, you can use our recipe to make your homemade Brown sugar or use store-bought, preferably with an Allulose base. 

Heavy Cream should be at room temperature and can be replaced with coconut cream if you prefer this Keto Syrup recipe to be Dairy-Free. 

Replace Regular Butter with salted butter if you are looking forward to making a keto salted caramel sauce. 

Vanilla Extract is optional, and you can use Homemade Vanilla Extract made in less than an hour in an Instant Pot or a store-bought.

Second Step: Melt Butter

Place Butter into your cooking pot and cook for a few minutes on medium heat.

Third Step: Add Brown Sugar

Lower the heat and add brown sugar sweetener.

Whisk until fully dissolved.

Fourth Step: Heavy Cream

Add heavy cream and whisk together once all of your brown sugar has melted.

Fifth Step: Cook

Return the heat to a medium-high and start cooking your low-carb caramel sauce. 

Cook for approximately 10 – 15 minutes until you see the sauce thickening.

Sixth Step: Vanilla Extract

Once you see the sauce has thickened, switch the heat off completely.

Add a few drops of Vanilla Extract and whisk into the mixture.

Vanilla Extract is entirely optional. It is unnecessary, but it will add that additional pinch of flavor into your Sugar-Free Caramel Syrup.

Tips and Tricks

  • Brown Sugar – our homemade brown sugar can be replaced with store-bought brown sugar, but preferably with an allulose base. 
  • Dairy-Free Option – replace heavy cream can with coconut cream or full-fat coconut milk.
  • Salted Caramel – replace regular butter with salted butter to make keto salted caramel sauce.
  • More color – if you want to achieve darker Caramel sauce, add a few teaspoons of Yacon Syrup.
  • Nutritions – are calculated for a tablespoon. I have got from a whole recipe ¾ of a cup, which is 15 Tablespoons.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

How do you keep Caramel Sauce from Crystallising?

Using our preferred sweeteners such as allulose or Xylitol will not crystallise your Sugar-Free Syrup once cooled.
Using a suitable sweetener is very important in this recipe.
Using a powdered version of your sweetener and replacing normal water with distilled water helps dearly against crystallisation, especially when using Erythritol.

How do I reheat Sugar-Free Caramel Sauce?

To reheat your keto caramel sauce is super simple.
All you have to do is place it back on the stove and reheat it on low heat.
Do not use Microwave or high heat as it might shock the butter and heavy cream, and your sauce might split and separate.

What if my Caramel Sauce hardens?

You might come into an issue of your caramel sauce hardening more than you would prefer. All you have to do is reheat slightly on low heat, and the melting process comes back. 

How to store Homemade Sugar-Free Caramel Syrup?

This syrup acts the same as an ordinary store-bought sugar-free syrup will, just without additional, not necessary ingredients. It might not last for years, but for sure long enough if stored properly.

In a closed bottle or a Mason Jar, you can have it on your Kitchen Counter for weeks.

If you still prefer to store this perfect keto syrup for longer, your fridge is the answer. 
There, a good 2 or 3 months works perfectly for storing.

  1. I hate to be the bearer of bad tidings to you, but…..
    I am a type1 Diabetic since birth and the artificial sweeteners that you mention all raise the glucose levels in Diabetes. Although there are no sugar carbs, they do have substantial amounts of sugar alcohols, and just ask any one with Diabetes who monitors their blood glucose levels like a hawk because 99% of “Artificial” sweeteners in sugar free candy and drinks contain huge amounts of sugar alcohol and we can NOT eat or drink them without raising our blood sugar levels. And yes, even honey is bad for us, just ask a Diabetes Doctor.

    • Dear Ernie, it is not good to use sweeteners all the time or in big amounts. And yes, everyone is different and some have problems with sweeteners. I also do have a daughter who is type 1 diabetic and test every single recipe on her monitoring blood sugar levels. Eating low carb or sugar free treats does not mean that you do not need insulin. You still do and every single person knows how that reacts with him.
