Since I made our keto cupcakes, everyone keeps sending me messages about how great the batter is for keto diet. So many of my readers use it for making various cakes, muffins, cupcakes, and even a big wedding cake. 

This low carb pound cake recipe is moist, buttery, rich and extra soft to the bite. the best batter in the keto baking universe.

After using the same batter with a few alterations, I have already made few keto recipes such as chocolate cupcakes, Christmas tree cupcakes, and Santa hats cupcakes

I already have vanilla cupcakes in the pipeline and keto lemon cake meringue cupcakes that are on their way. 

But this time I have decided to get something different. A proper traditional pound cake. And tell you. It is so delicious, and I am blown away by it.

Making this keto pound cake is super simple. Our easy recipe uses only a low carb flour and few ingredients. Whoever has made this pound cake before, love this cake and says the cake tastes the bet of all keto baked goods.

Our buttery cake is really a great recipe especially as this keto pound cake is moist, which is a missing part in so many recipes.

STEP-BY-STEP INSTRUCTIONS FOR MAKING ALMOND FLOUR POUND CAKE

First step: Prepare ingredients

Prepare all ingredients and heat the oven to 200 Celsius or 390 Fahrenheit. 

Regarding almond meal, you can use almond flour or blanched almonds you have grained in your blender. 

Butter should be at room temperature and sweetener, depending on what is your favorite. No need to split into dry ingredients.

Vanilla Pound Cake

Second step: Whisk eggs with sweetener

Place whole eggs together with the sweetener into the kitchen machine and mix well until fluffy light consistency. 

If you want to make your perfect low carb cake a bit fluffier, you can whisk egg whites separately and fold them gently at the end before pouring them into the cake pan.

Third step: Add the rest ingredients and whisk

Once your eggs are whisked, add all other ingredients and whisk thoroughly until all combine.

Fourth step: Pour and bake

Once all is combined, pour the whole batter into a loaf pan and bake for 20 minutes. 

Cover the loaf with aluminum foil to avoid burning the top, and bake for another 20 minutes. 

To ensure the whole loaf is fully baked, use a wooden bbq stick or a toothpick to poke the middle of the cake. 

If the wooden stick comes clean, your cake is baked and ready to enjoy. 

Remove the cake from the oven, let the cake cool and serve.

  • Extra fluffy – whisk egg whites separately and gently fold them into the cake mixture towards the end
  • Taller pound cake – if you wish to have your almond flour pound cake taller, use a smaller pan. 
  • Parchment paper – cover your baking pan with parchment paper to ease up the cleaning afterward
  • Aluminum foil – cover your pound cake in the middle of baking to prevent the cake from burning on top.
  • Wooden stick – poke into the center of the pound cake, ensuring your cake is fully baked. 

FREQUENTLY ASKED QUESTIONS AND ANSWERS

What size loaf pan to use for pound cake?

For our recipe, I have used a 30-centimeter or 12 inches in the length loaf pan. If you would love to have a higher cake, use a smaller pan. 

Can you replace almond flour with coconut flour?

I would not suggest replacing almond flour in this low carb pound cake recipe as it gives our cake its delicious, distinctive light flavor. 

But you can, of course, replace almond flour with coconut flour by adding only half of the amount you would typically add for almond flour.

Coconut flour is much denser and needs approximately half of the amount only.

If you are allergic or do not have almond flour at home, by all means, you can use one of our keto flour suggestions. 

Can you make almond flour pound cake dairy-free?

You can make our almond flour pound cake dairy-free by replacing butter with one of your dairy-free alternatives.

Store the cake in the airtight glass container in you fridge is the best way. It should be perfect for 3-4 days. 

Can you freeze keto vanilla pound cake?

You can undoubtedly freeze our vanilla cake. I suggest portioning it before freezing. Wrap the cake pieces into parchment paper before. A whole cake frozen together is very difficult to portion.

How to thaw the low-carb cake

Simply take your slices out from the freezer the night before and let them thaw naturally.
