Why Will You Love These Nutella Cookies?
These Keto Nutella cookies are a delightful treat for several reasons.
First and foremost, they embrace the combination of chewiness and softness that defines the perfect chocolate cookie. Adding sugar-free Nutella adds into the experience, offering a rich hazelnut flavor that satisfies the sweet tooth.
What makes these cookies even more appealing is their simplicity. You can quickly whip up a batch with only four ingredients and straightforward steps. The recipe does not rely on additional sugar, as Nutella brings its sweetness to the mix. Plus, including almond flour adds a delightful crunch, making each bite a harmonious blend of textures.
Whether you are a Nutella enthusiast or just someone craving a quick and easy homemade cookie, these cookies will win your heart. Their irresistible soft and chewy texture and distinctive hazelnut flavor make them a go-to treat for any occasion.
Because of their color, those are a great addition to your keto halloween recipes.
Ingredients you will need
- Nutella: Even though real Nutella Is a big no-no in our lifestyle, we call most of the other hazelnut spreads similar to the taste of Nutella, either sugar-free or keto. Below, I have mentioned some quick steps on how to make your own sugar-free Nutella at home. If you want to experiment with other homemade or store-bought sugar-free Nutella, go ahead. This recipe should work with all.
- Eggs: Eggs play a crucial role in binding and providing structure to these almond flour Nutella cookies, contributing to their delightful chewiness and soft texture.
- Baking Powder and Almond Flour: I have decided to add some baking powder (or baking soda) to lift them in the oven during the baking process. Also, adding a bit of almond flour will give them a bit of crunchiness, so they are somewhat soft to the bite.
- Vanilla Extract: When I made our vanilla extract in the Instant Pot, I added it to every sweet recipe. I feel vanilla adds an extra touch with a bit of sweetness to sweet dishes. You can add it in, but you can also skip this ingredient. It is up to you what you prefer.
Sweetener: I have decided not to add any of the sugar replacement. I believe Nutella – any type or brand, is extra sweet on its own. Making cookies out of it does not need to add any additional sweetness.
Shapes and Baking
As our video shows, we always prefer to make mini cookies. We love bite-size cookies, and that is what I make all the time.
If you prefer to make larger cookies, you can do so without problems. I suggest adding a few more minutes while baking.
