How can you stabilize your whipping cream so it does not fall?
There are 2 main options to use, in case you would like to use this Keto Whipping Cream as a decoration on your cakes and would like for it to last a bit longer.
- Unflavored Gelatine – Mix half a teaspoon of gelatin with cold water and gently mix the liquid with your Whipped Cream.
- Cream of Tartar – half a teaspoon of Cream of tartar helps to whip cream to hold the peak for longer
Can you beat whipping cream too much?
You can certainly beat your whipping cream too much and therefore it is always advisable to never leave the counter while whisking.
Even if you are using your big kitchen machine and you do not have to hold the whisk, stay close by at all times. There are only a few seconds when your whipped cream can turn from a perfectly stiff peak to butter making.
What if I have overbeaten the whipped cream?
Just in case you have overbeaten the heavy cream too much, there is still time, you can sometimes reverse it back with those 2 tips:
Reheating – melt the mixture once again in a double boiler to combine the liquid with solids. Once all is combined, place the bowl over the ice bath and whip it again
Extra Heavy Cream – slowly pour an extra 50% of the new heavy cream into the mixer while mixing. This should bring the whipped cream together and in most cases, you can save your overbeaten whipping cream.
What if I have overbeaten Whipping Cream and nothing helps?
I am the person, who always says to never throw your food.
Even if your baking or cooking did not work.
There is always a solution to all of our mistakes.
And this goes for overbeaten Whipped Cream as well.
If nothing from the above works, still do not throw it.
Keep whisking until solids separate from liquids fully.
From the solids, make butter.
Since you might already have a sweetener in, make keto sweet butter, which you can later on use for some cake filling.
Add a bit of cocoa powder and you can have perfect chocolate butter to nib on or spread onto our Keto Farmers Bread.
And again, do not throw anything. Liquids, which will be left from the butter making is perfect buttermilk you can drink or use for baking.

Why is my whipped cream not thickening?
If you come into the problem of your whipped cream not thickening, you might have had it too warm. Even the room temperature heavy cream is sometimes really difficult to whip into perfection.
Either add more of the cold heavy cream from the fridge or pour the liquid into a bowl you stored for a while in the freezer and whisk again.
How to store Keto Whipped Cream?
Once whisked, you can leave the cream in the same container and store it in the fridge for 2-3 days.
You can also store it in mason jars.
But always in the fridge.
Can you freeze Keto Whipped Cream?
As a whole, I would not suggest freezing it, but you can make little niblets of Frozen Whipped Cream.
Using your Piping bag, pipe little thumbs onto a baking tray covered with parchment paper and place it into the freezer.
Once frozen, you can transform it into a zip log bag to save space.
