Judging from the way my husband went after them, they really must be one of the Best Keto Pancakes.
That is because I tell you. He hardly touches anything sweet I make that is keto, low carb, sugar-free or healthy in any sense. And I have not done anything real for years already.

Recipe for Almond Flour Pancakes
After a few failed attempts with various Keto Flour Alternatives, I have decided to go for Almond Flour pancakes. Those have got not only the closest to actual texture and taste, but they just performed exceptionally well with fluffiness, look as well as taste.
I would not suggest replacing Almond Flour in this recipe and making Keto Coconut Flour Pancakes as I have tried them already, and they become dry.
Savory Keto Pancakes
I have to mention this alternative, as it is a delicious option to regular sweetened pancakes.
All you have to change is skip the sweetener entirely and keep the rest of the ingredients. Maybe Vanilla Extract as well.

First Step: Ingredients for Low Carb Pancakes
Prepare all your ingredients to make those perfect keto Cream Cheese Pancakes.
Make sure your cream cheese and eggs are at room temperature.
You can replace blanched almond flour with ground almonds. Just get the ones without the skin, as your Low Carb Pancakes look will be much nicer and lighter.
If you are going for Gluten-Free, do not forget to pick Gluten-Free Baking Powder.
Vanilla Extract is optional but adds that lovely vanilla taste into the pancakes.
Second Step: Sweetener and Eggs
Using your hand blender for easier maneuver, whisk eggs with sweetener until fluffy light consistency. It will help at the end for your pancakes to be extra fluffy.
Third Step: Rest of the Ingredients
Once whisk your eggs and sweetener properly, add all other ingredients needed.
Fourth Step: Whisk
Whisk once again using your hand Blender until your batter is thoroughly combined.
Fifth Step: Cook
Heat your non-stick pan and add a bit of extra virgin olive oil.
