A sheet cake is simply a cake baked in a sheet pan. It is a super easy cake to make. Instead of using round-shaped cake pans, pour everything onto the baking sheet with edges and bake.
Summer cakes or coffee cakes filled with various fruits are the most popular for baking as sheet cakes. Some different approach I used to make flourless chocolate sheet cake if you are interested.
What Type of Cake Pan To Use?
As you see in the video, I have used a medium size sheet pan with raised edges for our blueberry cake.
You can also use a sheet pan extender, which I love dearly because it allows you to extend into a size you want, and you can even split the cake into two sections. If you plan to build this into a celebration cake, use a round cake form.
How Many Carbs Are in Sugar-Free Sheet Cake?
With our blueberry cake recipe, the carb intake is minimal. Considering the blueberries, one serving comes to 1 gram of carbs only.
Alternative Sweetener Options for Almond Flour Cake
You can use your favorite, as only a tiny amount of sweetener is involved. A sweetener is not so crucial in this cake as it keeps the structure the same.

Variations of This Easy Berry Cake
The basic recipe of our sheet cake is so simple, and you can alter it with just an additional ingredient.
I usually pick berries we have at home, and sometimes I even add mixed berries all in for a delicious mixed berry cake.
But you can also alternate by adding the following:

STEP-BY-STEP INSTRUCTIONS FOR MAKING SUGAR-FREE BLUEBERRY SHEET PAN CAKE
First Step: Prepare all ingredients
Prepare all of the ingredients.
It is best to have everything at room temperature as it will be much better to whip up egg whites or the whole batter.
At the same time, heat the oven to 170 Celsius or 350°f.
Second Step: Egg Whites
First, whip up your egg whites using a hand mixer or machine with a whisk attachment and beat on high speed until soft peaks form. Set aside.
Third Step: Egg Yolks with sweetener
Next, whisk egg yolks with a sweetener of your choice in a separate bowl until the mixture thickens and changes to light yellow.
Fourth Step: Other Ingredients
Once your egg yolks are thoroughly whisked with sweetener, add whipped egg whites and gently fold them all into the mixture using a hand spatula. Remember to scrape down the sides.
Switch your kitchen machine on medium and slowly add all other ingredients while whisking simultaneously.
Fifth Step: Pour
Cover your preferred sheet pan with parchment paper and pour the batter in.
Sixth Step: Blueberries and bake
Add fresh berries to the batter and bake the cake for 30 minutes or until the toothpick inserted into the center of the cake comes out clean.
Once baked, open the oven and let the cake cool completely before serving.

Apart from blueberries, you can use any berries as they all are allowed in our low-carb lifestyle. Pick from strawberries, raspberries, blackberries, red currant, gooseberries, cranberries, and much more. Pick from fresh or frozen berries.
Can I Cover the Cake During Baking for Better Lift?
Covering a cake during baking can affect its lift and texture negatively. It is not recommended to cover the cake during baking.
Can I Make Triple Berry Cake With This Recipe?
Using the same ingredients without adding berries to the cake before baking can be an excellent base for a triple-berry cake. I have made a strawberry cake the same way, but layered cake only into a double berry cake.
Using the same steps and baking a simple white cake, you can place fresh berries with whipped cream in between.
For the best result, allow cake to cool completely on a wire rack for at least 2 hours before slicing and filling.
In that way, you get a perfect triple; I have to make this cake for you.
What To Serve With Sugar-Free Cake Apart from Whipped Cream?
Our Summer sheet cake is excellent on its own with your morning coffee. We love to serve it as a breakfast cake as well.
For a dessert for your guests, add a scoop of ice cream, heavy whipping cream, and fresh grated cinnamon.
You can also sprinkle powdered sugar or brown sugar on the cake before serving.
Pick from our homemade sweeteners such as maple syrup, condensed milk, caramel sauce, or chocolate syrup for additional moisture into the cake.
How Do You Store Sheet Pan Cake?
Store this almond blueberry cake is super easy. Inside a glass container in your fridge, it should stay perfect for 3 to 4 days. If you need a longer time, please freeze it.
You can undoubtedly freeze our blueberry sheet cake.
I usually cut it into portions and place parchment paper between each serving. Then all of the cake goes into the freezer-safe container.
Whenever I am ready to use it, I only pick the number of pieces I need, and parchment paper separation helps dearly.
Take it out of the freezer the night before and let it thaw in the refrigerator naturally.
