Since we have a pudding in the name of our recipe today, I have to mention a few low-carb puddings you might want to look at. Although they are not the same puddings as today’s bread pudding recipe, they still count into the pudding section.
Starting with Chocolate Pudding and its extra smooth consistency, followed by the Viral popularity of Dalgona Coffee, which I have transformed into Dalgona pudding.
Further on, the most beautiful of all, our Rainbow Low Carb Chia Pudding, which I always make for our visitors, or a super quick breakfast choice of Chia Coconut Pudding, there is always something to indulge into.
Bread Pudding
This is not an ordinary pudding, but a pudding that is extra easy to make and loved by all. And the best part, it’s made with our famous Brioche Toast.
Let me introduce you to the best bread pudding you can enjoy in our low-carb lifestyle.
Bread Pudding is a casserole type of dessert, where the base of the recipe is a few days old bread cut into smaller pieces. Soaked overnight or not, sweet egg-cream mixture and lots of butter and spices poured over and baked gives this perfect Dessert casserole its delicious texture.
The original Bread pudding is not even close to Keto or Low Carb. But this version made together with our protein enriched keto brioche toast slices is a perfect fit in the keto lifestyle.
How many carbs are in Keto Bread Pudding?
Compared to real bread pudding with 33 grams of carbohydrates per serving, our recipe is the way to go.
With 2 grams of carbohydrates per serving, you can indulge in this deliciousness all day long.
Well, not all day, as the calories do matter as well.
What is the best Keto Bread for bread pudding?
You can use various keto bread loaves for this recipe, such as our Farmers Bread or Challah Bread, but the best bread for bread pudding would be the Brioche Toast bread as it was made directly for making a French Toast and this is something very close to it.
The Bread Pudding can be identical to the French Toast Casserole.
Alterations for bread pudding
With our basic recipe, you will achieve the perfect keto dessert you need.
But if you would like to go further and experiment a bit more, I would suggest trying:
- Rum or rum essence into the mixture
- Dry cranberries before baking
- Chopped nuts
- Adding whisked egg whites on top of the pudding before baking
- Lime zest
- Chocolate chips white as well as dark
- Top it up with farmers cheese
- You can even swap the mixture with Custard

STEP BY STEP INSTRUCTIONS TO MAKING Keto Bread Pudding
First Step: Prepare Ingredients
Preheat the oven to 200 Celsius or 390 Fahrenheit
Prepare all of the ingredients for making the best keto bread pudding.
If you have already made our brioche toast, you can skip further.

It is best to use a few days old breads. Whichever bread you choose to use, it soaks the mixture much better if stored even for a few hours.
Second Step: Make Egg Mixture
Add your eggs, heavy cream, cinnamon, brown sugar substitute, and vanilla extract in a bowl.
Third Step: Whisk
Using a whisk, mix all of the ingredients until you get a perfect egg mixture to use later on.
Fourth Step: Prepare and Cut Brioche Toast
Once you have your brioche toast ready, slice it into thicker pieces and cut into small cubes.
Depending on what casserole size you’re using, fill up the casserole and make sure there are enough bread pieces covering the casserole up to the top.
I used a medium-size casserole for this recipe, and four thick slices of brioche toast bread were more than enough to fill the whole dish.
Fifth Step: Pour Mixture over the bread
Once all of your bread pieces are spread inside the casserole.
Take the egg mixture and pour it all over the bread.
Make sure you mix the bread pieces with the egg mixture, so every bit of bread is soaked in.
It would be best to keep the soaked casserole inside the fridge overnight to get the best results and the best tasting bread pudding if you have the time.
Sixth Step: Add Butter
Once everything is mixed together, top up your casserole with pieces of butter.
Seventh Step: Extra Brown Sugar and Cinnamon
You can also sprinkle some extra brown sugar and cinnamon on top of your casserole.
Remember that cinnamon and brown sugar might slightly darken your bread pudding once baked, which is very tasty.
Bake for 30 – 40 minutes until golden brown.

Make sure the fresh berries are not included as they last only a day or so and might spoil your whole bread pudding if stored together.

You can undoubtedly freeze our bread pudding, which is precisely what I have done.
I would like to suggest that if you use the fresh berries as a topping, I will take all of those out before freezing the casserole.
