Are Crepes Low Carb?

Since the beginning of our low-carb journey, one of the dishes I was always trying to accomplish was crepes. They are and have always been one of our favorites. I went through quite a few recipes, I found on the internet until I have altered them all into this one, which for the last few years is the top for us.

And to answer the question, yes, those ones are fully Low Carb. But also Keto.

I am not even trying any more alternations since Sophie loves it. And as you might already know, I try to make big batches, so I do not have to stand in front of the oven or in the kitchen all the time.

What is the difference between Crepes and Pancakes?

Crepes, very popular in France and Central Europe, are much more liquid. They are way thinner and bigger in size. The thinner the crepes are, the best and tastier they are.

Crepes can be eaten also savoury and are called Galettes.

Pancakes are very popular in the US and are eaten mostly for breakfast as a sweet option sprinkled with maple syrup. They are much smaller in size and much thicker and fluffier due to the baking powder added to them. You can of course make a delicious Low Carb Pancakes as well.

What equipments do you need to make Low Carb Crepes?

  1. Mixer: Handheld of Magic Bullet, if you use the exact amount as in the recipe. Kenwood, if you are planning 2 or 4x the amount
  2. Non-Stick Pan
  3. Smaller size Ladle for scooping precise amount of batter. You can also use a measuring cup
  4. Flat Ladle for flipping the Crepes

Ingredients needed:

  • Eggs
  • Cream Cheese
  • Almond Flour
  • Sugar Substitute
  • Butter
  • Naturally dried Stevia (optional)

STEP BY STEP INSTRUCTIONS:

First Step: Eggs

Add whole eggs into the bowl and mix them only until whites and yolks are incorporated together. You do not need any fluffiness as this will make your crepes thick and too fluffy. Not something we want to achieve in this recipe.

Second Step: Other Ingredients

Once the eggs are fully mixed, add all of the ingredients in and mix until fully combined.

Sometimes, if either butter or creme cheese is not at room temperature, your batter might be clumpy. In this case, just place the mixture into the microwave for a few seconds and mix fully once again.

Third Step: Stevia

Adding Dry Stevia, which we normally make at home, will help in achieving that pinch of sweetness you are looking for in Keto Crepes. Do not worry about the natural green color. Since dry stevia is extremely sweet, you only need a tiny bit and that will not be visible at the end.

Fourth Step: Transfer Low Carb Crepe Batter

For easy cooking, I always transfer the batter into a taller container. This will allow me to scoop it onto the pan easier as well as mix it fully from time to time.

Fifth Step: Prepare for cooking

Once the batter is transferred, prepare the plate, onto which you will be placing Keto Crepes. Get your smaller Ladle for scooping, Flat Ladle for flipping, oil, nonstick pan and we are ready to start.

At the same time switch on the heat and let the non-stick pan heat up fully.

Once fully heated, add a tiny bit of oil, just to cover the pan. Do not add too much, otherwise, your crepes will be too oily.

Sixth Step: Scoop

With your small Ladle, scoop the batter onto the already preheated pan with a bit of oil on it.

Seventh Step: Make them thinnest

Once the pan is heated and oil is on, scoop the batter onto the middle of the pan and with a circular motion, try to spread the batter throughout the pan evenly, to achieve the thinnest possible crepes.

Eighth Step: Turn

When you see the edges browning, that is the time to flip our Low Car Crepes. Gently release the edge with your hands, so you are able to slide in the flat ladle. With the flat Ladle gently flip the crepes and let them brown on the other side as well.

Once you get to a Profi level, you will be able to skip the flat ladle and flip the crepes just in the air.

I have unfortunately not achieved this as yet. Not even trying it. But maybe one day. 🙂

BAKERS TIPS:

  • Use Non-Stick Pan: Always use a nonstick pan. I have tried to make this Low Carb Crepes Recipe on several occasions on an old pan and I could have never achieved the crepes as thin as those are. Maybe if you are going to make pancakes from those, or tiny mini crepes, you can. But a Non-Stick pan is here a must.
  • Heat the pan fully. Your pan needs to be fully heated before you add the oil. Otherwise, your crepes will stick and would not be able to flip them.
  • Mix the batter in between. It happens, that almond flour might slowly settle at the bottom of the jar.
  • Use just the right amount of oil. Just a little bit of oil will go a long way. Too much will make Keto Crepes too oily.
  • Swirl the batter on the pan correctly. Here I would suggest having a look at the video in a precise way. Pour the batter in the middle, let sit for a second, and then with circular motion let the batter be spread throughout the pan evenly.
  • Cook just the right time: once the edges of the low-carb crepes start to brown, it is time to flip them.
  • Dry Keto Crepes? add few drops of almond milk.
  • Clumpy Batter? One of the ingredients was not at room temperature or not soft enough. This happens mostly when either butter or cream cheese is not at the same temperature. Just place the batter for a few seconds into a microwave and mix again.

How to store Low Carb almond flour Crepes?

Once you have made those almond flour Keto Crepes, it is time to store them. If I make 4x the amount, which I normally do, I cover the whole tower with aluminum foil while they are still warm. This will help me to keep them soft for the future. If I let them sit and fully cool, they sometimes dry on the edges. This tip has helped me to keep low-carb crepes from drying.

After eating, whatever is left, I just store in the fridge for up to 2-3 days. No longer.

Can you freeze Low Carb Almond Flour Creme Cheese Crepes?

I make 2x the batch, sometimes even 4x the batch. Make it once, separate it into small portions, and there it goes into the freezer. Since it does not really last for long in the fridge, I pack it into 6-10pc batches. In that way, Sophie has it almost every evening as a dessert after dinner and also takes it to school instead of lunch if applicable. She is not very much into sweet dishes, but this one, she never gets tired of.

You can also use Whipped Cream with some added mascarpone or crushed nuts.

Do you have to add Sugar substitute to Keto Crepes?

You can skip that part completely. I am used to adding the sugar substitute because one of the favorite ways of eating crepes for my daughter is completely bare. She sometimes eats them just as they are, without adding anything. And therefore that little bit of sweetness is needed.

But If you are planning to fill them up with one of the fillings mentioned above. Just skip it entirely.

Can you make Low Carb Crepes Savoury?

Big yes for this choice. Savory Crepes are very popular in our region and are filled with various savory fillings. Starting from stews, goulash, minced meats, whatever you can imagine. Think of tortilla fillings.

In this case, you should certainly skip both the freshly dry Stevia as well as Sugar sweetener.

Can you make Keto Pancakes from Keto Crepes?

By adding just a little bit more almond flour into the batter, the mixture will become a bit thicker and is perfect for making pancakes. If you desire, add a bit of baking powder to get that fluffiness, pancakes have. You can make them small as you are used to, or just spread one throughout the pan to achieve the biggest Pancakes ever.

Just do not forget to cook it much longer, so the batter inside is fully cooked as well.

  1. Mix eggs in a hand mixer to get them a bit fluffy
  2. Add all of the other ingredients and mix it properly into smooth consistency
  3. Heat up the pan and with a scoop, place one at the time in the middle of the pan
  4. Slowly holding the pan, spread the mixture, so it is completely covered
  5. After one side is done, gently turn it over with a spatula
  6. Continue until all of the mixture is finished
  7. Serve it with low carb jam, nutella or a peanut butter
  8. Bon Appetit

You can omit sweeteners totally. Happy you like them. They are our favorite as well and at all times in the freezer.
